My dear foodies,

The guacamole the Mexican dip par excellence, and although its projection is international, not only Mexico has a dip made with avocado, countries like Venezuela with traditional guasacaca or chile con el pebre although the latter does not have avocado, it is considered a variety, the reality is that Latin American countries love to eat avocado and was not expected to include this in many of their popular recipes, the avocado is considered the butter of nature, its creaminess, its flavor is among the best among all the diversity of fruits. For now, we will concentrate on making the original recipe for Mexican guacamole.

And although in Mexico there are disputes over one ingredient, the tomato, many claims that popularly this ingredient is not in the original recipe and others defend by the sword that the tomato is part of it, so we will be guided by the most popular version that carries tomato.

My secrets INGREDIENTS

(for 4 portions):

♡ 2 ripe avocado

♡ 1 small tomato

♡ 100gr Onion

♡ 1 jalapeño pepper (optional)

♡ 20 gr Fresh cilantro (leaves only)

♡ 1 Lime

PREPARATION

Preparation time: 15min
Cooking time: 0min
Total: 15min

We chop the onion in fine brunoise. We do the same with the jalapeño if you choose to add it to our guacamole. Blanch the tomato, that is, submerge it in boiling water for 20-30 seconds and refresh it in ice water to cut the cooking. Peel it, cut in half, remove the seeds and chop the meat into small cubes.

Wash the coriander and separate the leaves from the stems. The latter we discard and keep only the leaves. Finely chop them with a sharp knife, sliding the cutting edge over the coriander so that the cut is clean and we do not crush the product. Cut the lime in half and squeeze the juice from one of its halves, reserving the other half for another preparation.

Finally, cut the avocados in half and, with great care not to cut ourselves, remove the bones. Remove the meat, place it in a large bowl and mash it with a fork. Add the above ingredients: onion, chili, tomato, cilantro and juice of the half lime. Season to taste and serve with nachos or tortilla chips.

With what to accompany the homemade guacamole
The most popular way to eat guacamole is accompanied by some nachos or bread and a fresh beer. It is a fabulous aperitif or a dish, as our Mexican friends say, with which to complement an informal meal or a snack between friends based on Mexican recipes such as quesadillas, burritos, and so on.

A trick to preserving homemade guacamole that doesn't rust is to add the juice of half a fresh lemon, stir well to mix all the ingredients and store in the fridge in an airtight container.
