Garlic And Mozarella Bread With Oregano

(Edited)

Yesterday I saw this wonderful recipe on YouTube and today I had to try it out. It looked so good I could hardly resist a day. So today it was time to try it out.

Putting together the ingredients started with a challenge as I didn't gave milk and was lazy to go to the grocery store. In these cases I always improvise. Thank God, I have plenty of experience, so I always know what to do (or at least I think I know :P). Today instead of milk I used warm water and sour cream.

If you compare my recipe with the original, you'll see the difference but I can assure you, both are excellent, heavenly good but I have only tasted mine.

Ingredients:

  • 250g + 9 tsp all purpose flour,
  • 5g instant yeast,
  • 1 tsp salt + for the top,
  • 42g butter, melted,
  • 125ml warm water,
  • 1 egg, whisked,
  • 2 tbsp oregano + 1 tbsp on the top,
  • 2 tbsp 20% sour cream,
  • flour for kneading.

For the top:

  • 2x125g fresh Mozzarella cheese,
  • 2 clove garlic,
  • 1 tbsp oregano,
  • salt,
  • 1 egg.

Method for the dough

IMG_20200211_144447a.jpg

Choose an appropriate mixing bowl, add 250g flour and the rest of the ingredients for the dough and start kneading the dough. You'll get a sticky dough but it's ok, there's more flour to be added later.

When it's ready, cover with a plastic foil and let is rest for an hour in a warm place. It should double in size during thos period.

Add approximately 9 tbsp flour and make a dough.

Transfer to a baking sheet in a baking tray, flatten with hand into a circle.

IMG_20200211_163506a.jpg

Use a sharp knife to score the dough crisscross style like in the photo above.

IMG_20200211_163740a.jpg

You'll need garlic and one egg for the top.

IMG_20200211_163919a.jpg

Beat the egg, add minced garlic.

IMG_20200211_164053a.jpg

Brush with egg.

IMG_20200211_164344a.jpg

Slice Mozarella cheese the shape of French fries.

IMG_20200211_165128a.jpg

Insert pieces of Mozzarella cheese to fill the scored dough and sprinkle wit oregano and salt. I hope you do a better job as mine look terrible. I'm not very good at decorating, have problems but I'm working on it :)

Bake at 200°C (400°F) preheated oven. I have an old oven with no thermometer, nor top-bottom heating, so I baked it on medium heat for about 35 - 40 minutes.

It's recommended to be consumed freshly out of the oven while it's still warm but believe me, it's so good you can't stop eating.

The recipe says fresh Mozzarella or any other cheese but be aware of the fat each cheese is containing. Fresh Mozzarella contains 19% fat while the others over 40%, which means your bread might be too greasy if you use more cheese and very fat one. For me it's the first time when I'm baking with Mozzarella but I love it. It's perfect for this recipe.

Bon apetit.

U.I. My English cooking vocabulary is terrible, I'm doing my best and learning, so be gentle :)
