SIMPLE CHILLI SAUCE
Hey everyone, been able to grow such large volumes of great fruit and vegetables in your garden tends to make one rather creative when it comes to cooking. I have never generally been the best cook, however since having these amazing gardens for the last year odd I have become much better. I tend to feel that that lack of ingredients in the past had limited my culinary skills, however now with that problem taken care of the sky truly is the limit!
I have always loved chilli's and now for the first time I have been able to grow them in larger volumes. I have around 10 different chilli species in my garden. Chinese Five Colour, Moruga Scorpion, Carolina Reapers, Ghost Peppers, Cayene Peppers, Jalapeno's, Cherry Bombs and more.
I have been recently experimenting with chilli sauces. When I first started I used Spirit Vinegar and much to the horror of my Mom: 'Craig that stuff is drain cleaner' so I have not used that again and she is right. I have tried Apple Cider Vinegar and more.
Recently I went to my Uncle for dinner and he gave me some great advice. Craig there is only 1 way to make chilli sauce, Olive Oil, Chilli's, mince them up and that is that. If this is not the worlds most simple recipe I am not sure what is, but it tastes great!
This morning I had a chat with my sister @buckaroo and she gave me another simple recipe I will try on my next harvest. Olive Oil, Apple Cider Vinegar, Garlic, Onions, liquidize and bottle, sounds good too I am just worried about how long that will last in the fridge? Try it I certainly shall!
The last month odd I have been making green chilli sauce as they were not quiet yet ripe. I eat them green and later on when ripe and red too, however last night made my first red batch of chilli sauce!
This time around I added more olive oil and fewer chilli's the sauce was slightly more viscous than usual but truly decilicious and incredibly good for you too!
All bottled up and ready to serve. I usually go through around 750 ml of my amazing home-made chilli sauce in 2 weeks. This bottle I am told takes some folks a year or two to finish. I really am addicted to the stuff. I always used to buy retail store chilli sauce however ever since been able to grow them at home that all changed. I initially thought it would be a massive cost saving but alas, IT'S NOT, as the olive oil I use is very expensive, but pure. I probably spend the same amount as I used to buying it, however the ingredients and health benefits way better than store purchased sauces.
Below the bottle on the right made a week ago with my green chilli peppers and the red bottle recently made with ripe and ready red peppers!
