Although eggs and cream baked in a pastry case goes as far back as the 13th and 14th century in Italian and French cuisine, we can thank the French for today's Quiche, which in simple terms is just an open savoury pie.

A crisp pastry base filled with either meat, seafood, vegetables or cheese set in an egg custard made with either cream or milk and eggs, eaten either cold or hot with a crisp green salad being the favoured accompaniment; making this the perfect light meal.

Quiche Lorraine can probably be called the mother of all quiches and has a filling of bacon and cheese.

Other quiches have charming French names like

  • Quiche au Fromage - quiche with cheese
  • Quiche aux Champignons - with mushrooms
  • Quiche Florentine - with spinach
  • Quiche Provençale - with tomatoes

We will be showing you how to make the perfect Quiche Florentine with a twist using a Cheese Short Crust Pastry Base, filled with Spinach, Corn & Cheese in a Greek style yogurt & egg custard.

THE RECIPE
Ingredients

PASTRY

  • 1 cup Cake Wheat Flour
  • 1/4 tsp Salt
  • 100 gram ice cold Butter
  • 125 ml Mature Cheddar Cheese - grated
  • 1 Egg yolk
  • 5 ml Lemon Juice
  • Enough soda water added to egg & lemon juice to make 80 ml liquid
    Grate butter into flour & salt, rub till it resembles fine crumbs.
    Add cheese, mix then add liquids & mix till a smooth pastry is obtained.
    Press into quiche pan & blind bake approx 10 min at 180C.

FILLING

  • 1 cup double cream Greek style Yogurt
  • 2 Eggs
  • 125ml Cake Wheat Flour
  • 5 ml Baking Powder
  • Seasoning to taste
  • 1 cup cooked, drained & diced Spinach
  • 1/2 cup cooked Sweet Corn
  • Spring Onions - sauteed & diced
  • Parsley - chopped
  • 200 ml grated Cheese

Beat together Eggs, Flour, Baking Powder & seasoning.

Stir in remaining ingredients & spoon into half-baked pastry case.

Bake a further 30-35 min at 180C till set.

You could really use any veggies in here but remember to pre-cook and drain all water off, this aas delicious thank you @thevillan!

Wow! This looks delicious and easy. The best thing about this type of food is that you can keep it in the refrigerator and heat it quickly when you want food. Very practical in these times when we spend all day at work and we must heat food in the microwave oven. I think I'm going to try one with chicken, olives and capers. Thank you!

I think this dish is too good and rich, I think it doesn't exist in my country (Venezuela) but you leave me wanting to eat it.
