Hello my Dearest Foodies,

Are you beetroot lovers? Well I know some who are and some who are quite the opposite, lol. Nevertheless, whether you are or not, I must tell you that I surprise myself with the delicious flavor of this salad.

Besides, it can't get any easier to make it, yet the health benefits and nutritional value are enormous. I am sure most of you already know them, however, in case yo do not you can read it HERE about BEETROOT. About QUINOA PLEASE READ HERE. In the nutshell, they are both superfoods, there for, you would do yourself a huge favor if you try it, lol.

I also like to recommend to eat it with sweet potato oven baked fries. That way this meal is truly complete and satisfying.


Spiralized Beets with Quinoa & Miso Dressing
Vegan – Gluten Free

INGREDIENTS for 2 servings
β€’ Red beetroot 2 medium size (pealed & spiralized)
β€’ Miso dressing ΒΌ cup
β€’ Quinoa 1 cup (1/2 cup uncooked; follow the cooking instruction on the package)
β€’ Arugula 1 cup
β€’ Raw sunflower seeds ΒΌ cup
β€’ Sesame seeds 1 tsp

β€’ Roast your sunflower seeds on heated pan. Reduce the heat and stir with spatula so both sides turn golden. It will take only few minutes, so be careful, do not burn.
β€’ When ready, take it off the heat and set aside.
β€’ In a bowl, toss spiralized beets with miso dressing, until they get evenly covered and slightly saggy.
β€’ Add quinoa and toss again.
β€’ Top with arugula, sunflower seeds and sesame seeds.


β€’ Organic Miso 1tbs
β€’ Juice from 1 lemon
β€’ Wakame flakes 1 tsp (or Nori sheets)
β€’ Garlic powder Β½ tsp
β€’ Ginger powder Β½ tsp
β€’ Maple syrup 2 tbs
β€’ Sesame seed oil 1 tsp
β€’ Chili pepper flakes (optional)
Blend all in a blender or with whisk.

I love beets! It's quinoa that I don't like! Everything else sounds wonderful and looks beautiful!

Oh my goodness Melinda, you are so funny. You know who hates beets? @janton,lol. You both guys should make this salad as an experiment, because I believe you would like it. The thing is, that the Miso dressing practically takes over the flavor and if I would cover your eyes and give you taste it without telling you what it is, you would have hard time guessing it ❀️🌿❀️

Only if I can use twice as many beets and sunflower seeds and leave out the quinoa! πŸ˜€

haha! She loves beets! Oh man, I get nauseous just thinking about them. lol. I'd be willing to try that dish if someone else made it so I didn't have to see or smell the beets before they went into it.

colorful and sounds so good I do love beetroot, and have it often I used to have it every day with lunch but since I have had the hernia I find if I have too much of it I get indigestion so I have to pace myself with it these day s

Apparently and I didnt know this till recently its hard to digest and if you suffer from Indigestion which I do now beetroot feeds it well LOL
