How to Make a Very Berry Cobbler | Easy Recipe

Do you love cobblers? If you do, today I am going to show you how to make a Very Berry Cobbler. For the most part, cobblers are really easy to make, there isn't any complicated ingredients and the results are extraordinary. This berry cobbler is slightly tart from the berries, sweet and crunchy from the biscuit top and creamy and cool from the ice cream. So before I show you how to make this cobbler, run to the store and pick up your favorite vanilla ice cream and then get started on this recipe. The ice cream is a must, it really brings the flavors and textures of this cobbler together. This cobbler has a biscuit top which is a different than the cobbler that rises to the top (both are equally delicious).

Very Berry Cobbler | Easy Recipe

For the Berry Mixer

6 ½ cups mixed frozen berries (984 g)
1 ½ cups frozen strawberries (227 g)
1/4 cup sugar (48 g)
2 Tablespoons cornstarch (19 g)
1 teaspoon lemon juice (5)
1 teaspoon pure vanilla extract (5)

Biscuit Top

1 ½ cups all-purpose flour (149 g)
½ cup sugar (96 g)
1 ½ teaspoons baking powder (5.61 g)
¼ teaspoon salt (1 g)
6 Tablespoons unsalted butter cubed (86 g)
½ cup buttermilk (118 g)
1 Tablespoon buttermilk (14 g)
Turbinado Sugar/Raw Sugar

Preheat the oven to 350 degrees F. Grease a 9×13-inch baking dish or 6 ramekins.
The Filling:
In a large bowl add mixed frozen berries and frozen strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Combined together until thoroughly combined. Spread evenly into prepared baking dish.
The Biscuit: Add flour, sugar, baking powder, and salt together in a large bowl. Whisk until combined. Using a fork, cut the butter into the flour mixture until it resembles coarse meal. Slowly add in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling.
Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with turbinado sugar.
Bake for 45-50 minutes, or until the biscuit topping is golden brown.
Serve warm with vanilla ice cream. Enjoy!
