Cranana Chumpkin Bread - Lori's Cookbook

This is my entry for this week's @foodfightfriday challenge.

What happens when you take a recipe and twist it? It becomes your own!
I took a pumpkin-banana bread recipe and added cranberries and chocolate chips to it. But when you say all those things at the same time, the recipe becomes a bit unwieldy.

Introducing my...

Cranana Chumpkin Bread!

Process

(This time, I was making a double recipe.)

Begin by:

  • Preheat oven to 350F.
  • Grease and flour 2-3 bread pans.

Mash:

  • 2 over-ripe bananas (picture shows 4 because I was making a double recipe.)

Add:

  • 1 cup soaked cranberries (mine were leftover from making cranberry juice)
  • 1 cup pumpkin puree
    (Picture shows the double recipe I was making.)
    Set this bowl aside.

In a clean bowl, mash with the back of a wooden spoon:

  • 1/3 cup softened butter
    (picture shows double recipe.)

Mash into the butter (this process is called creaming):

  • 1 1/3 cup granulated sugar

This is what it looks like afterwards. It doesn't have to be perfect for this recipe, but the butter should be well-incorporated into the sugar.

Stir in:

  • 4 eggs
  • 1/3 cup oil (I almost always use olive oil)
  • 1/2 teaspoon vanilla

This is how it looks afterwards. You can use a hand mixer if you desire, but for this recipe it's not critical. The butter will melt during baking.

Stir in:

  • 3 1/2 cups flour
  • 3 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
    (Picture shows my double recipe.)

Carefully stir in:

  • mixed fruit (from earlier)
  • chocolate chips (I used a large bag for my double recipe - add what you think feels right for you.)

My batter is ready for the oven.

Spoon/pour into the prepared bread pans. Never fill the pan more than about 2/3 full or it will rise over the top of the pan!

Bake 50 minutes at 350F. Cover with foil (if you like - I didn't) and bake another 10 minutes until a knife or skewer pushed into the middle of the bread comes out clean (or with only molten chocolate!)

Allow to cool before removing from the pans. Butter if desired.

Yummm! Give me all the cranana munchkin (punchkin?), pumpachip bread you got. This looks so good. I’m missing all my pumpkin everything this year. I will live vicariously through all y’all but between you and me… this recipe takes the cake (or do I mean canana?). Haha. Happy holidays to you and yours @viking-ventures.

I hear ya! I was just telling @dandays that when we get back home I’m going to work on diabetic, vegan, gluten and sugar free versions. Eeeekkk, sounds like I have my work cut out for me 🥶

Yep, your work cut out for sure! The problem with most sugar-free versions is that they're using artificial (or similar-ish) sweeteners. I'd go for a honey/maple syrup version myself, then replace the flour with a paleop blend or something... That's a level of playing I'm not as good at.

I was thinking a coconut/almond flour blend with a stevia/xylitol blend. Both are all natural and derived from plants. 🤷🏼‍♀️ Probably wouldn’t be half of good though. Before we left the states I started sweetening everting with apple sauce I made from a cheese grater. My husband and I thought it was delicious but for a diabetic I believe it’s still too much sugar.

The coconut/almond flour is a good blend for sure. Stevia and xylitol are a bit expensive for me, but then, I don't bake very much right now. Knowing, however, that everything sweet will trigger an insulin response, I am less afraid of sugars than I am of grains. I did cave in and had a slice yesterday and my blood pressure shot up (far more than it did after having some crustless pumpkin pie... and yes, I did take pictures of that too...), so I really need to take the grain thing seriously.

I love this that it's sweet, but not too sweet. Most of the sweetness comes from the fruit and chocolate.

My mouth is watering and my belly is rumbling. I have got to try this one out for myself @viking-ventures. You are so creative with your little twists, I do the same thing a lot of times because I don't have whatever in the frig, so I scour around to find something else to fill in the blanks.
But that combo, oh yea, send me a big hunk.😊

Glad to give you a new idea! And yes, I'm known to change things according to what I have. Sometimes, the trick is working out where to stop (before the recipe completely implodes...)
