Wow, I had never even thought that those kind of tortillas could be made from sweet potatoes, or potatoes! We have another thing we call "tortilla" but it's much wider.
I'll have to test how to make the ones you showed.

That looks like a cake, they're so thick, are they pure sweet potatoes or with some flour too?
No, actually they are normal potatoes + eggs + onion + some plants (céleri, cebollín, hierba buena, random stuff like that) + salt. They're very simple. Bake the potatoes, cut them in pieces, put them with the eggs and spices and place them in a cooking pan with a cover, then take them out when cooked. It's one of the simplest and cheapest meals here.
That's interesting and sounds good too. You should make a recipe of this dish and pls tag me so I can see. I would love to try it
