15 minute Plant-based Pasta Bolognese

Here's another weekly favourite for you. It's really quick to make and tastes great! Uses vegetarian sausages instead of quorn mince or similar. Puy lentils add a great flavour along side the rich tomato sauce. Not much else to say except give it a try as part of #fruitandveggiesmonday

Serves 2-3

Ingredients

4 x vegan sausages
1 x red onion
4 x garlic / 2 tsp garlic powder
3 tbsp tomato puree
1 tsp dried basil
1 tsp dried oregano
400g tomatoes / 1 x 14oz can tomatoes
200g mushrooms
200g puy lentils
250g pasta

Method

  1. Chop your veg and boil the kettle
  2. Get pasta cooking in a saucepan with boiling water & cover
  3. Mash up your vegan sausages with a fork
  4. Add mashed up sausage and onions to a saucepan with a little water to stop sticking and cook on a medium heat until the onions translucent
  5. Mix in tomato puree, garlic, herbs and some salt and pepper
  6. Mix in tomatoes and mushrooms and cook until mushrooms are soft and tomatoes have collapsed
  7. Mix in the puy lentils and cook for 2 mins until hot
  8. Drain your pasta and combine with the bolognese sauce
  9. Plate up and garnish with parsley

And here is the pasta king @nutman again with anther mouthwatering recipe! I will be making this one for sure. You know, I never thought about mashing up veggie sausage, lol. What a great idea! 🍅🌿🍅

haha pasta king you're too kind! I came across mashing up sausages in another recipe before and applied to this! Works better with some sausages than others. The ones I used here don't have a "skin" so they just mash straight up. If they have a skin you have to remove it first and it gets a bit messy hehe.

My pleasure, lol. And yes I realized that the sausages have to be skinless, but most vegan ones are anyway. At least the ones I tried 😊

I love lentils in a pasta sauce. Adds such a nice texture and fills you up in the best way possible! I'm sure the veggie sausage adds some nice flavor, as well. As always, I would be happy for a bowl of this!

:D Yes indeed! Beans/pulses, greens and carbs in every meal required! Kinda skimped on the greens in this one though.. just a small dose of parsley. I add spinach to the mix when I have some in the fridge though. Thanks I would be happy to dish you some up :)

Cant beat a a good veggie pasta!!!! I have an easy recipe where i fry red peppers and blend with some olives which makes a good alternative to tomato sauce ... it wpuld ne great with vegan sausafe too!s

Looks delicious, great pictures too. We make something similar but with garbanzo beans (roasted) instead of vegetarian sausage. I used to buy vegetarian sausage, but I have never seen it here in Mexico.

And, 6km to walk and get these ingredients, that's awesome! Free exercise!

:) We call garbanzo beans chickpeas here in England. It's probably good that you use them instead of veg sausages anyway as they're definitely healthier (not processed)! I put them in quite a lot of stuff but have never roasted them myself. Might give that a go :D

Not 6km, 6k steps hehe, so more like 3k, but yeah still good exercise :)
