My Actifit Report Card: November 24 2019
It was a beautiful Sunday afternoon today, it got up into the 50s so we were able to get out and walk in the park. It made a nice break from having to go to the YMCA all week long. Any time we can get outside and walk, it's much better - both physically (think Vitamin D from that beautiful sun) and mentally.
I spent awhile doing some house chores then l headed to the kitchen to do some cooking. I promised @crypt-skip his favorite meal of pork steak and oven-baked steak fries. He had the regular white potatoes for his steak fries, but I made mine from sweet potatoes. For a side dish, I made peas and avocado - something I never would have dreamed of until I saw a post by @jaynie, but now it's a favorite of ours.
In addition, there was a biscuit recipe I wanted to try and it was a success!
The recipe is truly simple - only 2 ingredients:
2 cups self-rising flour
1-1/2 cups nonfat plain Greek yogurt
Combine the ingredients in a bowl with a spoon to combine, then knead the dough with your hands for about 2 minutes until smooth. Roll out the dough on a lightly floured surface to about 3/4 inch thick then cut into biscuits. I got 17 biscuits of the size you see in the picture. Bake at 450 degrees F for about 10 minutes.
