Daily Menu: Saturday barbecue with tubers and rucola

Saturday is one of my favorite meal plan days because I cook tubers and it includes the sweet potatoes. I always get hungry sooner than usual so I prepare the pancakes between meals.

Tubers include almost all root vegetables - like carrots, sweet potato and similar. This is excluding the potatoes. They are different species.

My folks at home are not delighted with the tubers. I have no idea why.

But I always prepare them a solid quantity in of ordinary, yellow potatoes so everyone is happy.

I know they would love to have the barbecue an each day, but I doubt that will happen. I am not big meat eater and I started avoiding it.

I prepare simple meat from barbecue or electric grill plate I use for frying. Or I beat it up real thin, season with something interesting and then fry.

I add to boil all kind of roots - carrot, sweet potatoes, any sort of other tuber and then make into a purée or solid.

For salad I use the mix of green salad and rucola ( Eruca Sativa, Taramira). I season it with apple vinegar, salt, oil and very thin slices of onions.
I sometimes add thin radishes sliced, fresh sliced avocado or pickles .
