Dear Steemians,

I hope everyone enjoyed "Saigon Breaks". Being at a fitness trainer's house such as @needapencil, it was inspiring to have a groovy little dance session /workout for digestion after practicing some battle rock gestures to end my game when I rock a circle.

Today I want to share another recipe that I really like. Inspired by Katy, a friend who made something similar, but still a very different white sauce with gorgonzola, cheese and cream, I am happy to share something even more light with celery. Katy used celeriac. Being French, her recipe really stuck with me to date and just paved the way to several dishes like this.

Introduction

Firstly we will use three pans. As seen above there are Oyster Mushrooms (Pleurotus) with chives and thyme, Cellentani Pasta made up of spelt flour and our white sauce. Important to note, is that we need the chives and the thyme for the Oyster mushrooms. Also, add the white wine in small portions and not all at once. Oh yeahh, don't even think of using just dry herbs guys. Go get some fresh ones or grow them in your garden. Makes a huge difference. Also Parsley and Tarragon is very welcome in this dish.

@mamrita was kind enough to host me and provide me with a kitchen and her assistance. We enjoyed an awesome and healthy meal together.

Namasté out of Berlin X-Berg

Ingredients:

Here's what were gonna need:

  • Oyster Mushrooms

  • Fresh Oregano

  • Fresh Thyme

  • Chives

  • Garlic

  • Celery

  • Carrots (organic, even red or purple ones are great)

  • Cherry Tomatoes

  • 2 Onions

  • White Wine

  • Extra Virgin Olive Oil (I used mild)

  • Cellentani Past Noodles (made up of spelt) or any other according to your preference

  • Black Pepper

  • Soy Sauce (make sure you use a nicely fermented one with less preservatives like Tamari - makes a difference)

  • Oatly Oat Cream

  • Whole Wheat Flour / Any other Flour (possibly gluten free) for thickening

  • Bouillon

  • Chili (optional)

  • Nutritional Yeast (at the end as parmesan alternative)

Preparation:

Firstly cut Garlic brunoise, add it to a frying pan with a bit of olive oil.
After they look glossy, add a bit of White Wine

Slice Carrots or dice them and add to frying pan.
Cut 2 Onions and add to the dish. Make sure the Wine is lesser and evaporated a bit.
Make sure you prepare the Oregano, Thyme and the Chives

Cut Celery large dice or paysanne and add to frying pan
Add some Oregano (just a bit)
Add one small chili for the spice (optional)

Cut Cherry Tomato into wedges and add to frying pan
Add more White Wine to the frying pan and stir. Maybe thicken with flour.

Cut Garlic brunoise and add to a frying pan with olive oil and Oyster Mushrooms
Add half thyme and Chives to pan with Oyster Mushrooms and stir.
Add other half thyme, chives and all the Oregano to frying pan and stir.

@heart-to-heart if you have a vita mix, i recommend make some just by putting oats and some water in a vita mix, drain the water (oat liquid) and then add more to the oats and make a porridge out of that. That is pretty creamy. Barista oatly is out too and very tasty. So many options in what one could eat, right? Since we are so accustomed to the status quo im just wondering what awesome salads grow out in the forests that we all don't even know about yet. Can't wait for the spring herbs. So much unexplored yet still so easy to have empathy and ahimsa. Thanks so much for your lovely comment and for stopping by.

Gosh, sounds like a dream! I've never been to Europe, but I would so love to visit one day. One of my closest friends is from Germany, so of course it is high on my list. Better keep saving my pennies to add to the travel fund. ;)

Totally. I hope travelfeed.io will make a deal with miles and tobe able to exchange them for airline miles. Then we can buy tickets with the tokens here. Well that's a dream that i hope comes true. Also if you ever make it out to india, do let me know. I have a home for steemians there and a really insider cool travel route that's besides tourist pop and a really great experience. I will visit California soon. Used to live in the states in the 90s. Never went to Atlanta tho. Only new york, upstate, Chicago, Detroit(around the great lakes) Canada, Florida and Cali.
