ecoTrain: Meal in Budget @winnietran

Hello friends,
Coming to this week's competition, I was really fond of the main ingredient. Thanks to the inspiration of @ecotrain post with fabulous photos about potatoes, I came up with the idea of making a simple dish of potato with items that can be found easily everywhere. Partners of the potatoes today are mushroom, egg and tofu.
A little bit about the benefits of potato, not only giving us fiber but also supply for our body many vitamins and minerals. And it works very well at preventing any heart disease and also good vegetables in keeping our body fit. So today, I will make a simple dish with potatoes and don't take so much time to make it. The process of making this dish is so simple and we can add in any of our favorite ingredients to turn it into a yummy potato.
Step 1: We will wash all the potatoes, I used 3 potatoes today and rinse off the water.

Then massage the potatoes with cooking oil and 1 tsp of salt. I used the cooking with garlic. It looks like when we do the baked potatoes, I covered the potatoes with a foil to prevent it's too hot and making the potatoes too dry. I will grill them on 10 mins while was preparing the filling.

Step 2: I will prepare the tofu and mushroom while waiting for the potatoes. For the tofu and mushroom, I will cut them into small cubes.

I used silky tofu, which is softer than the usual one. But I think any kind of tofu is all good, the normal one might give us a thicker texture than this tofu.

Then come back to our potatoes, I will cut 1/3 of the potatoes and take out the inside, I will make a hole in each potato and mix it tofu and mushroom and one egg this will help our ingredients can connect better.

Don't forget to season our mixture with a pinch of salt, pepper, and sugar.

Step 3: We will fill our mixture into the potatoes and put it back to the oven in 7 mins.

After taking it out, I put on a pinch of pepper to light up the smell of the food. And they were ready to serve.

I used it with mayonnaise and I think it's fairly good to use with this dish.

This is my first time using potato as the main ingredient, which aims to light up the flavor of potatoes and cooperate with the normal ingredients that can be found easily in any kitchen. And, also a nice idea for a day without meat or a meal with enough nutrients and just cost a few pennies.
