Okieee, this will get a little weird and I will tell you all, all about it. In Thailand, as a lot of you may know how hot it is most of the time. Some people find it weird that in this weather, we love eating spicy food as well as hot food, temperature wise. In this post, we do exactly just that!

Noodle soup!

Totally one of the Thai dishes I love the most and I can eat it every single day. One of the reasons is that, there are so many types that I sometime just discover a new type after living in Thailand all these years. Different kinds of soups, noodles, topping and seasoning. They even have a blood soup type (real dark!) and that's one of my favs too!

Fish balls, fish noodles, fish chips & Pink soup!

In Pattaya, I discovered this noodle shop on Google maps. Seems like it's a local favorite, been around for a while and and it just looks different! -- 'How so?' you ask. In Thailand we have this soup called 'Yentafo' which is a regular (pork / chicken broth) soup with pink fermented soy sauce which, yes, makes it a pink soup! Taste just umami like many other fermented food. A little sour and salted so goes real well with the sweet broth.

Now all these fish ingredients in the bowl. You might have seen rice noodles, egg noodles, and so on. Well, have you seen fish noodle!? It's a good ratio of flour and fish in form of thick noodle. Then add those little round fish balls and topped with this mind blowing fish skin chips!. It's such a great way to add texture variety into the bowl! Honestly, I came here mostly to try this with the noodle hehe.

Back to the basic: Egg noodles, wontons

This one probably no need to say much. It's a great soup with some types of noodles we all are used to. Egg noodles with pork stuffed wontons. The thing that makes this bowl more special than any other noodle place is the fish skin chips.

That fish skin chips!

We even order an extra bowl with just the fish skin chips so that we can add on as much as we'd like. It's that yummy if you ask me :) I have tried other fish skin chips too. They're so well known in Singapore especially with the salted egg seasoning. This one is a little different. It's homemade and they make it super crunchy. Not too much of the seasoning as well so it could just go well with any kinds of soups.

Just a little secret / tip that I think it would be great on all soup wherever you're from so maybe give it a go next time you go for a bowl or two of these noodle soup in town. Wait.. is it easy to find fish skin chips where you're from? O.o

Just as it is in nearly every Asian restaurant setting its a family business. They all own it as it would not function without every single one of them:) Him and his brother definitely run it!

This looks incredibly delicious. I remember having a similar fish ball and fish noodle soup in China, one fish goes a long way!
