Food with a view: Homecooked Spaghetti Carbonara & Salad

Click on the second image to find out! I had to show my delicious spaghetti carbonara first! After we had been eating out almost every day since we left Budapest, it was time to introduce some homecooked meals again. The first part was the easiest: getting ingredients for a good salad. So that was easily decided although we got some resistance from our daughter, unfortunately. Thankfully that was easily compensated by giving her some slack and making mommy's spaghetti carbonara with it. That's a very important part of the deal, it has to be mommy's spaghetti, not daddy's. She refuses to eat those like she refuses to eat a lot, but we have seen a huge improvement in her willingness to try new things, which makes us proud! Let's hope we can continue this path and say she eats a lot more in a while from now.

Spaghetti carbonara

Although normally only my daughter wants to eat it with me, not because my boyfriend doesn't like it, but because his stomach protests afterwards. I assumed that today he'd not eat this with us but stick to the salad only, but this time he also ate it and to our surprise, he had no issues with the food afterwards. Great! That means I can make it more often, haha. It's much nicer sitting down and have the same meal, isn't it?

The Ingredients

In case you were wondering how to make this super easy and fast spaghetti which is my daughter's favorite, here are the ingredients:

• spaghetti (duh) I think we use half of the pack for three of us
• cooking cream, I used 3 smaller packs for the three of us which was more than enough
• bacon, I used a double pack from Lidl
• garlic (in this case I used powder, but normally I use fresh garlic)
• pepper
• salt
• last, but not least: fresh parsley! A lot of it!

Well, only if you love parsley of course, I truly love it with everything I make, as long as it's fresh! Some items were a trial because I was very used to buying the same ingredients from Lidl in Budapest, while here they sell slightly different products, I think the first attempt worked out just fine.

The process

Is very simple, just boil the spaghetti, meanwhile bake the bacon until they are good enough for the sauce (I prefer them baked until they are slightly crunchy). If you use fresh garlic, bake this with the bacon, if you use powder like I did this time, just add it when you finish up the sauce.

I always lower the fire once the spaghetti is almost done and then add the cooking cream. Stir the bacon and the cooking cream and then add pepper, salt and garlic powder. I always add the parsley last. When the spaghetti is done put it in a bowl and add the sauce before you serve it.

The finishing touch: the salad

I usually mix up my salads a bit up depending on what we have in the fridge but usually I will at least add some sort of lettuce, cucumber, paprika, cherry tomatoes, feta, olive oil. In this case that was everything and thanks to the very nice olive oil we bought here it tasted so good!
