Homemade breakfast burritos!

One of my favorite meals of the day is breakfast and when I do have a little time, I like to whip up some eggs and see what I come up with. I was admittedly a bit tired and forgot to take a few photos of the beginning process, but I'll describe it for you!

Ingredients:

  • Eggs (I used x4 Large shell eggs and made 5 burritos)
  • Butter
  • Mozzarella Cheese
  • Milk
  • Potatoes
  • Spinach
  • Tomatoes
  • Flour Tortilla

Note: I never use measuring tools so if you follow this write-up, it may take a bit of trial and error!

Note 2: I recommend preparing a batch of potatoes ahead of time. You should cut them very thin and more like hash browns, but small chunks will work too!

Start off by dropping a chunk of stick butter into your warm pan and ensuring you allow it to cover the entire surface. Once the butter is melted (but before it dries) go ahead and crack your preferred number of eggs into the pan.

Immediately pour a a small amount of milk into the pan and begin beating the eggs and milk to ensure they become one consistent color. Continue stirring the eggs until they become opaque and then allow to rest for a few moments. The milk will see your eggs start to become nice and fluffy and full. As they 'fluff' we will want to start adding the mozzarella cheese to the tops of our eggs. You can either go omelette and fold the ends up, or stack a layer of eggs ontop of the cheese to make sure it melts.

As your eggs start to finish and the cheese is nice and melted, go ahead and add some spinach and tomatoes to your pan so they begin to warm up. Be generous with your spinach if you use it, it will shrink very quickly!

While the spinach and tomatoes warm up, you can use this opportunity to crisp up a tortilla! I do this by just adding a layer of aluminum foil to one of my stove burners at a low setting and laying the tortilla across it. Keep an eye on it! It will crisp incredibly fast and may burn!

When the spinach and tomatoes have warmed up, you can go ahead and slice the eggs into portions using a spatula or your tool of choice. This will make it super easy to build your burritos!

Add a portion of your eggs to the tortilla and grab your potatoes that are already prepared! Add a portion to your tortilla followed by a handful of spinach and a couple of tomatoes!
