Making a home-made Egusi @sonofremi

I am a big fan of food, from a very young age. I love many local dishs and recipes, am from the eastern part of Nigeria there many local delicacies from different tribes. I am Igbo therefore I love my tribes local dishs like egusi, okra and ofe oha.

I MET THIS LITTLE GUY IN THE MARKET 😄

Today being Saturday, I woke and decided to eat a big meal and wrote my grocery list and went to the market. Buying ingredients for the soup was a little bit difficult on a student's budget and things in the market had become costly due to the current rise in dollar which has affected our normal naria currency.

MY LIST FOR THE DISH

1 . Meat

  1. Three cups of egusi
  2. Palm Oil
  3. Ugwu (Fluted pumpkin leaves)
  4. Crayfish
  5. Pepper
  6. Stock Fish

PREPARATION OF LOCAL EGUSI SOUP

Firstly in cooking the dish, I had to simmer the meat add add onions, maggi and salt at a low heat. Then I added water to allow the meat to boil. After the meat had boiled till it was soft, I added palm oil to a sufficient amont then I scooped the already mixed egusi paste into the boiling pot and stirred it. Then I added pounded crayfish and pepper into the boiling pot and stirred continuously. I allowed the egusi to boil for a couple of minutes before adding the cut vegetables (Fluted Pumpkin Leaves) and stirred contionously. Finally after it had boiled sufficient, I bought it down and the soup was ready to be served😄.
