Mushroom Monday - More Winter Mushrooms

Here are a few winter finds for this #mushroommonday

I found some more Bisporella citrina which is nicknamed lemon disco fungi.

Lemon disco fungi is very tiny and hard like plastic. I don't know of any medicinal or culinary uses, at best you might pick one off and use it as a hat for a lego character.

I found some witch's butter. This is edible and good in soups, sadly I only found one little batch on this branch. Although it is edible it really doesn't have much taste or nutritional value. It just offers a good texture for a spicy soup.

I found some more Flammulina velutipes aka winter mushrooms. This year has been very mild so far and there has been plenty of rain so I may find quite a bit more of these. These are a good edible that has a nice mild taste and good texture.

Here is a strange turkeytail lookalike. I'm not sure what species of stereum this might be...

They resemble stereum ostrea aka false turkeytail but their fans are much too small. I'll have to go back here again after a rain to see if they might be Stereum gausapatum aka bleeding parchment fungi. As they expel water they create little red drops hence their common name bleeding parchment fungus.

I found some more phlebia incarnata again. Whenever there is stereum ostrea (false turkeytail) you have the chance of finding pink phlebia incarnata. It seems to grow in the winter as this is the only time I've ever found it.

It is quite bright pink compared to the drab winter landscape. This one has no medicinal or culinary uses. I just enjoy them for their strange bubblegum coloring.

Enjoyed your little selection for today -- looks especially 'festive' and attractive comparing to the colour-less pale winter outside my window. The "red bubblegum" one indeed looks very nice on the contrast of the colours we're used to.

I am lucky so far winter hasn't even hit here. Just rain and no snow. Maybe it all landed where you are at. Now strange bubblegum mushrooms are hatching over here.

I don't think I've ever seen those disco or witch's butter in this area before. They look like fun to add to a recipe as you said, though.

I've seen it up in the iron mountain area before. It's fairly common just really tiny and easy to overlook. Keep an eye out for witch's butter or amber jelly roll after a rain. It usually just grows on small broken branches under hardwood trees. I like to substitute tripe with witch's butter in menudo soup so it's not as gross lol.

Keep an eye out for the brown version called amber jelly roll aka exidia recisa, it is basically the same thing just a different color.

and a lot harder to spot if it's not coming in a yellow high-vis vest.

I think I know the brown ones, they are more commonly being eaten... I think?!

There's the commonly eaten wood ear but witch's butter and amber jelly roll is not commonly eaten because it has no taste, but little do people know it absorbs spices really well.
