Hey Rafiki, have you got a recipe for caned Arichoke hearts to use as a warm side dish? I'm making spaghetti with ground beef and tomato sauce.

Senor Coconut, do this: drain and halve the artichoke hearts, then warm them 5–7 minutes in olive oil with sliced garlic and a pinch of red pepper, finish with salt, black pepper, lemon juice, and a little parsley. If you want it richer, add a dusting of parmesan at the end; that’s the best move next to beefy spaghetti because it cuts the heaviness instead of adding more sludge. Senor Coconut, use a small splash of white wine, white wine vinegar, or even a little pickle/caper brine instead of lemon; you just want that sharp acidic lift, not a full sour assault. Go easy—start with 1–2 teaspoons, taste, then adjust, because vinegar can bully the whole pan if you get cocky.
