Besan Ki Barfi | Sweets made our of Gram Flour

Besan ki Barfi is one of the popular and traditional Indian sweets. Its popular especially in the northern part of the country. However these days you can find it pretty much every where. However this Sweet is very heavy and hot on the body and is usually consumed in the winter months. Naturally the regions with more of winters tend to have more if this sweet. I used to love Besan ki Barfi as kid. Whenever these was a festival in the house my Mom would make this and store. My sister and I ensured we stole and ate them all up ! Then my mom would thrash us both ! Good ol' days 😄

So today I am going to show you how to make Basen Ki Barfi. I have used whipped cream as one of the ingredients, However this is not mandatory. You can skip this ingredient if you want to make it a little light on the tummy !

Tips

This is important - while roasting the Besan constantly keep stirring throughout the process.

Make sure the Besan is cooked, if need be by tasting.If the Besan is not fully cooked it will smell of Raw Flour. That is not good.

Sugar syrup coagulates quickly. So its important that you mix it quickly as soon as you take it off the flame.

Dry fruits can be either mixed into it or added on the surface. The choice is yours.

Ingredients

2 cups Besan | Gram flour
1 cup sugar
1 cup cream
Ghee (Clarified Butter)
1 tsp Cardamom Powdered
1/3rd cup water
10-12 Pistachios/ Dry fruit of Choice

The Recipe

Use the Cream and 2 tbsp of Ghee to Knead the Besan | Gram Flour into a dough and keep it aside for 30 mins.
Heat a pan on low flame and heat the ghee.
Add the Besan | Gram Flour and Start roasting in the ghee.
This is important - constantly keep stirring throughout the process.
Break the lumps up and ensure that the ghee is absorbed evenly.
Keep Roasting untill the color changes to a golden hue and the aroma of roasted nuts fill the room and the oil starts separating from the mixture.
Add the cardamom powder and mix well.
Once done put the mixture into a deep pan| Kadai and keep ready on another burner.
Heat a pan and add the sugar and the water. Keep Stirring untill the sugar dissolves completely.
Quickly add the Sugar syrup into the roasted Besan | Gram Four mix. Mix well and quickly. You can heat the mixture on low flame for 5 mins while you are mixing the sugar.(See Tips)
Grease a plate with Ghee and Pour this mixture into it and spread it nicely.
Add the sliced pistachios or dry fruits of choice into the mixture.
Let it cool over 3-4 hours.
Cut and Serve. Store the rest.

Let it cool over 3-4 hours. Then Cut and Serve. Store the rest.

Now you can enjoy this yum dish whenever you want. Besan ki Barfi can be stored at room temperature for up to 7-10 days depending on where you stay and how cold it is. Refrigeration is not needed for this dish.
