Not much free time these days and not much will to do anything either. Figuring out what to cook every day is really annoying so tonight I decided to make something quick but tasty and nutritious...

Eggs and toasted bread with goat cheese!!

I saw someone post about fried eggs that weren't fried but basically they were cooked in boiling water, not exactly poached. The method was very easy and I decided to try it once. We liked it and I have been cooking eggs that way very often.

First take a pot, add half a glass of water in it and wait until it starts boiling. Then, add the juice of half a lemon mixed with some olive oil in the boiling water and cook your eggs in it. Once the water starts boiling, lower the heat and let your eggs cook for 5-10 minutes depending on how you like them. I am terribly afraid of salmonella, so I always have my eggs very well cooked(although I do miss a juicy yolk to dip my bread in from time to time). When your eggs are done, serve with some salt and pepper.

I also had some stale bread from two days ago, so I put it in the toaster, spread a little margarine and crumbled a little goat cheese on it. It was perfect with the "lemon eggs".

I also baked a cake with whatever I found in the kitchen, but right now I am too sleepy to share more details. Maybe tomorrow 😜

Ohhh, cooking egg like this is what I used to do..specially if I don't like oily foods. And I like mine a little undercooked then I'll just add salt on it with pepper, I love to pair it with rice haha. Rice is life 🤤🤩
