Mis apreciados amigo espero se encuentren bien. la tarde de hoy quiero compartir con ustedes la mi paso a paso para limpiar o componer unos pescado.

En esta ocasión se trata de unas hermosas y frescas catalanas las cuales son mis pescado favorito.

En mi región es común utilizar el término componer cuando destripamos y limpiamos los pescado para luego cocinarlos.

En esta ocasión mostrare la manera en que yo lo hago y lo haré de dos manera.

La primera de ellas es la forma mas tradicional en que componemos los pescado y esta la hacemos para freírlos y se hace de esta manera.

primeramente lavamos nuestros pescado luego con un cuchillos que esté bien afilado le hacemos una raja con mucho cuidado sin profundizar mucho para evitar romper las tripas desde el cuello hasta la parte baja del vientre.

First we wash our fish then with a well-sharpened knife we ​​make a slit very carefully without going too deep to avoid breaking the guts from the neck to the lower part of the belly.

Luego utilizando las mano con mucho cuidado para evitar pullarnos con alguna espina retiramos las tripas del pescado

Un vez retiradas las tripas nuevamente lavamos nuestro pescado con abundante agu para así retirar cualquier residuo de adentro.

Luego con un cuchillo limpio le hacemos un corte transversal característico al pescado el cual aparte de darle un toque especial al pescado sirve para que esa parte agrega sabor a la hora de sazonarlo.

La otra manera en que compongo mis pescado es para rellenarlos y hacerlos al hornos y lo hago de esta manera.

Con un cuchillo bien afilado abro con mucho cuidado mi pescado por la parte de arriba pasando en cuchillo lo mas seca posible del espinazo del pescado y sin perforar las tripas.

Una vez hago este corte despertando con mucho cuidado las espinas que cubren las tripa y las retiro con las manos evitando en lo posible de romper las tripas.
