These days I had the wonderful opportunity to make the envueltos with my mother. Wraps are very popular in my country. They're made with corn or elote and have a small piece of cheese. The envueltos are a delicious experience of taste and smell that enchants the sense of smell. We add coffee, and the combination of flavors becomes wonderful.

I got very excited talking about the envueltos and our delicious coffee. I wanted to start by talking about the preparation, which has certain parts that can be very cumbersome, but in the end, it is worth all the effort for the result.

Well, let's start from the beginning. We shelled the corn kernels and grind them into a whitish mass with lumps. The grinding process can be very tiring and requires a lot of arm strength to manipulate the grinder. We take turns to avoid overloading our arms.

After the grinding process, we proceed to assemble the envueltos. For this, we use the same leaves of the cobs. My mother says that these leaves give the characteristic flavor to the envueltos. So we spread the dough that is obtained on the leaves, place a good amount, and add a little piece of cheese, which will melt inside the dough.

Close the sheet and tie it, preferably with strips of the same sheet used to make the envueltos. When we have all the envueltos done, the next step is to cook them. My mother takes out the containers to place the large amount of envueltos

The envueltos are cooked with water, but not too much, almost like steam, and left to cook for about an hour over high heat. The smell they give off is extraordinary, and it invades the kitchen and permeates every corner of the house.

Once the envueltos are ready, we proceed to make what we cannot miss: a delicious coffee. The dark makes a presence when we need a drink to accompany the envueltos. It is curious that no beverage, whether hot or cold, goes as well as coffee does.

My mother makes it the traditional way. She heats the water, and once it starts to boil, she takes it out and begins to pour it into the coffee pot. The smoke invites us to have a cup of freshly brewed coffee. Once we have the two protagonists of this episode, the only thing left to do is to serve the diners. The plates dance from hand to hand, and we all get ready to eat the delicious envueltos accompanied by the best: our coffee.

Your envueltos kinda the same with our 'mais suman' though few people made this one because it's kind of, corn is not in season in here, and yes, this is really good paired with coffee. Enjoy!
