Plant Power Cooking Challenge Winner(s)

Let's start this post by announcing the winners of last week's "Christmas Delights" challenge, in which seven entries were entered, with delicious meals and desserts, and best of all, 100% vegan.

Plant based challenge - Christmas delights with plant based loaf, veggies and a Mexican inspired Christmas salad

In this very special challenge, the winner of the first place is @carolynstahl, who took great care in preparing a delicious Christmas dinner, very complete, where the protagonist is a vegetable bread, perfectly combined with a delicious sauce based on carrots, onions and garlic; complemented with a delicious mashed potatoes, Brussels sprouts and an exquisite Mexican-inspired salad. No doubt this recipe is ideal for this Christmas.

🎄 NO-BAKE PECAN CARAMEL PIE SQUARES - THE PERFECT XMAS DELIGHT 🎄

The second place winner is @amy-goodrich, who brings a delicious dessert for the holidays, No-Bake Pecan Carmel Pie Squares, a delight that will make us sweeter this Christmas. The author masterfully combines walnuts with dates and cocoa, without a doubt a recipe that we should all try and that will surely be present on our tables during and after Christmas!

The third place goes to @luckylaica, who recalls her happy childhood memories, when Christmas was a festive time, full of carols, delicious food and gifts, and she brings us a very colorful recipe that consists of a Sticky rice cake roll with sesame and coconut milk, a dessert that will beautifully decorate our Christmas table and brighten our palates.

The Brand New PLANT BASED challenge

Plant Power returns this week with a totally different challenge: ROOT VEGETABLES; and is that at this time in many parts of the world is eaten abundantly as an expression of these Holidays. These are days when we usually have more time to make a delicious and varied menu.

We have chosen root vegetables for this challenge, as they are very versatile and we can prepare multiple recipes with them; from soups to pies, smoothies, sweets... the variety is wide and diverse. So we challenge you to be very creative and present us with a delicious 100% vegan recipe, in which this ingredient is the protagonist.

We hope you have a lot of fun with this new thematic challenge at HIVE!
