This edition of Meatless Monday should be called Meatless Tuesday, since yesterday, due to technical problems, it was impossible to publish; yet here we are. A new week has begun, so I wish you days of happiness, health, blessings and much prosperity, dear friends of the Plant Power (Vegan) community, from here I, @sirenahippie, send you a big hug. And although it's already Monday night, as usual today we bring a new MEATLESS MONDAY, in which we compile some of the excellent vegan recipes that have been published on Hive in the last 7 days.

We start our gastronomic journey today, visiting Leblon, a beautiful restaurant located on a beach in Portugal, where we will taste an excellent vegan menu. Then we will meet someone who has been vegan for more than 30 years, and is an excellent example of all the benefits that this way of life offers us, as she remains very healthy, young and active. We continue tasting a delicious marinara sauce with basil that enriches many of our dishes, such as the exquisite lasagna with zucchini and potatoes that we will eat later. And for dessert, we will sweeten the day with a delicious avocado and mango ice cream, with grated coconut topping, and also with a green papaya sweet that is to suck your fingers. Let's travel the world with this delicious vegan gastronomic route!

Today we have included two excellent posts, which although they do not present recipes, they do talk about the vegan experience; and the first one is the one shared by @akida in the community, and refers to a visit he made to Leblon, a beautiful restaurant located in Praia Das Palmeiras, São João, 2825-426 , Portugal. With some beautiful photographs of the place and the vegan dishes that he tasted, he takes us on a visit to this establishment that deserves to be visited. Let's go to Leblon!

In this sincere and genuine post, @lisamariesworld tells us about his beginnings in veganism, at a time when this philosophy of life was practically unknown in the Western world; a decision she made as a child and it was an autonomous process of awareness that arose from her own being. In an inspiring post, he also tells us about all the benefits he has gained from this lifestyle.
