Delicious Breakfast From My Mini Garden!

I woke up earlier with a happy heart as I harvested a few crops from my mini garden. It feels so good to just pick and harvest spices, vegetables, and fruits despite the limited area I have at home since I am just living in a subdivision.

Bitter Gourd with egg for breakfast? It is one of my favorite meals as I taste the unique flavors of bitter gourd blended with the richness of scrambled eggs in this breakfast recipe. It is not only delicious but it has a burst of nutritious ingredients and tastes to kickstart my day.

And here are some of the quick shots as I was strolling around my mini garden to pick up some ingredients for breakfast. Until I finally decided to have bitter gourd with egg.

As I strolled around, I noticed many flowers of the crops that were in bloom and I looked forward to harvesting more spices, fruits, and vegetables. And I was so delighted since I was able to harvest several crops such as tomato, sweet pepper, and bitter gourds. After I harvested, I went back to the kitchen to cook.


Here are the ingredients and cooking instructions for my special bitter gourd with egg recipe.

Ingredients

  • 3 small-sized Bitter gourd
  • 3 Large Eggs
  • 1 Finely Chopped Onion
  • 1 Chopped Green Tomato
  • 1 Chopped Green Sweet Pepper
  • 4 Cloves of minced Garlic
  • 1 Chopped of Sweet Pepper
  • A pinch of Salt and pepper to taste
  • Cooking oil

Cooking Instructions

The first thing that I did was to prepare all the ingredients which included preparing the bitter gourd. I sliced the bitter gourds lengthwise. Then, I removed the seeds and their center portions.

When everything at the center was removed, I sliced the bitter gourd into thin rounds. I sprinkle a pinch of salt on the slices and let them absorb for fifteen minutes to reduce their bitterness.

After the waiting time, I rinsed the bitter gourd thoroughly and squeezed out some excess water.

On one plate, I chopped the other ingredients such as the garlic, onions, tomato, and sweet pepper, and placed them on one plate. Here are the sliced ingredients and the eggs.

Meanwhile, I cracked the three large eggs and placed them in a bowl. I put a pinch of pepper and salt to taste.

After the eggs were beaten, I started heating oil in a pan and added the chopped onions, garlic, sweet pepper, and tomato. I stirred them well to blend the spices and it was aromatic while I was sauteed them all.

Then I mixed the thinly sliced rounded bitter gourd into the pan and cooked the bitter gourd.

I let the mixture be cooked and covered in a pan through low heat until the bitter gourd achieved a tender taste and was not mushy.

After a while, I added the cracked eggs to the bitter gourd mixture and mixed them well. I allowed the eggs to cook until the whites of the eggs are set but the yolks remained runny.

I tasted the mixture and seasoned it with salt and pepper according to my taste preference and plated the Bitter Gourd with Egg mixture on a glass container.

I enjoyed my breakfast with this delightful recipe. I believe it is not only tasty but as well as nutritious.

And yes, the recipe was perfect to energize me for this day. It was even more yummy when I served it with hot white rice. I had a great meal and I am looking forward to cooking another meal as I pick some crops in my little garden at home.

we usually soak them with salt water to reduce the bitterness of the gourd.I only like it when it is cooked with egg. otherwise, it will be too bitter for me. : (

Yes, that is the technique here also to reduce its bitterness. Hehe. I love it with eggs. But did you know that Bitter Gourd with beef mixed with oyster sauce is also delicious my friend? It is not bitter though. I hope you have tried to taste it before. Best regards!

I've never seen a gourd like that 🧐, it's really curious. In my country they are different in appearance. I love veggies, and what you prepared looks delicious, I'll try it with the gourd I find here.

BTW, You've inspired me to grow my own vegetables. I recently planted some sweet pepper seeds, I'm already excited to see results.
