Mango Towel Cake

Hi, dear bloggers and food lovers! How are you all today? I hope you’re having a great day. Today I’m going to share a sweet and refreshing treat. It’s mango season in my area, so I bought some mangoes for home and made this cool and refreshing mango towel cake. The recipe is similar to yesterday’s chocolate crepes roll, but this time I doubled the recipe since I had quite a lot of mangoes. Okay, let’s get started

Ingredients:

  • 2 eggs
  • 2 tbsp sugar
  • 200 ml milk
  • 3 drops yellow food coloring
  • 1 packet vanilla powder
  • 100 grams all-purpose flour
  • 2 tbsp melted margarine
  • 100 grams powdered whipped cream
  • 150 ml cold water
  • 2 mangoes

Instructions:

Crack 2 eggs into a bowl, add the sugar, and whisk until well combined.

Next, pour 200 ml of milk into the bowl, then add the all-purpose flour and 1 sachet of vanilla powder. Stir again until well combined and the batter has a consistency that isn’t too thick.

Next, add 2 tbsp of melted margarine and stir again until well combined. Strain the batter to remove any lumps or undissolved flour. After straining, add yellow food coloring and stir until the color is to your liking.

Next, heat a nonstick pan, then scoop 1 ladleful of batter and spread it to fit the pan, as if making crepes, and cook over medium-low heat. Once cooked through and no longer sticky, remove the crepe and repeat until all the batter is used up. When finished, let the crepes cool.

While waiting for the crepes to cool, prepare the powdered whipped cream in a bowl, then add cold water and beat with a mixer until stiff peaks form. Dice the mango, add it to the whipped cream, and stir until well combined

Next, take 3 cooled crepes like these and place the whipped cream and mango mixture on top. Fold the right and left sides inward, then roll the crepes into a towel-like roll. Wrap them in plastic wrap and chill in the refrigerator or freezer for about 5 hours to achieve an ice cream-like texture for the filling.

Once chilled, top with the remaining whipped cream and fresh mango slices, and the Mango Towel Cake is ready to serve.

Wow! This looks so delicious! I’m definitely saving this—when mango season comes around, I’m totally making this! Thank you! Honestly, whenever it’s mango season, the mangoes here at home just go to waste; I never end up doing anything with them, haha!
