Hello friends, today I want to share with you some exquisite roasted and baked plantains, covered with a delicious vegetable sauce, where parsley will be the legume that will predominate the most in this mixture.

I tell you that today for dinner my wife and I decided to eat something different, the truth is that from time to time you have to eat something different, so I told my wife that I was going to prepare some roasted plantains, while I prepared the plantains, My wife was in charge of preparing a delicious papaya juice.

Yes friends, today I decided to have something different for dinner, my wife liked the idea, OF COURSE! She decided to make the easiest thing "PAPAYA JUICE", well friends from time to time we have to help our dear ladies in the kitchen.

This recipe is easy to make, we only need the bananas, but they must be ripe, because they are sweeter and combine very well with the parsley sauce, since this sauce contains a little vinegar and mustard, which gives it the bittersweet touch to the bananas.

Ingredients for two people:

  • Two ripe bananas
  • Soy margarine

You must select very ripe bananas and soy margarine:

Parsley sauce:

  • 20 gr of parsley
  • A large spoonful of white vinegar
  • 1/2 cup of water
  • 10 g of green paprika
  • 5 g of chives
  • A garlic clove
  • A small spoonful of mustard
  • Salt to taste
  • 1/4 of a medium potato or 10 g (cooked)

Preparation mode:

  • Step-1: After washing the bananas I am going to roast them on a large frying pan, although we can also use a griddle or grill:

  • Step-2: While the plantains are roasting, we must turn them over, so that they cook on both sides:

  • Step-3: The ideal cooking point is when the banana shell burns and the pulp inflates and the skin or peel opens:

  • Step-4: After roasting the bananas, now we remove the skin or peel and put it on a glass tray that is used for baking:

  • Step-5: Preparation of the parsley sauce:
    This sauce is very simple to prepare, we are going to do this as if we were making a guasacaca, its preparation consists of blending all the ingredients on the list, including the potato but cooked, with the exception of the parsley and mustard, since the amount of parsley, I am only going to blend half, I am going to crush the other half with a knife to decorate the bananas, as for the mustard, this exquisite flavor, I will add it to the sauce when it is ready.

Next I am going to blend all the ingredients in the small blender glass, including the tablespoon of vinegar and 1/4 cup of water. This small blender glass is very practical for this type of sauces, as well as for the guasacacas:

  • Step-6: In this step I am going to open the bananas a little to spread the Soy margarine:

Well friends, I'm going to put the bananas in the microwave oven, just for 3 minutes, so that they brown a little and absorb the flavor of the sauce:
