Delicious vegan meatballs with lentils and vegetables

Hello friends, I am pleased to visit this wonderful community, since in it we can learn many cooking recipes, especially food recipes for all occasions, because we do not know when we need a quick and delicious recipe, with few ingredients and of course that is "economical".

So thinking about these quick and economical meals, today I am going to prepare some delicious vegan meatballs based on lentils, vegetables and some seasonings but in small quantities such as: oregano, mustard, soy sauce and salt. . I also want you to know that I am going to fry these meatballs in the air fryer, which of course, does not use oil.

Delicious vegan meatballs with lentils and vegetables

These meatballs are very exquisite, the combination of the lentil pasta with the vegetables is very good, and with the touch of mustard and soy sauce, they are much tastier, these meatballs are ideal for lunch or dinner, the We can accompany it with rice, although they are also ideal to share at meetings.

Ingredients:

  • 100 gr of lentils
  • 20 g of onion
  • 30 g of carrot
  • 10 gr of parsley and celeri
  • 30 g of cabbage
  • A tablespoon of ground oregano
  • A tablespoon of mustard
  • A tablespoon of soy sauce
  • A tablespoon of soybean oil
  • 1/4 tablespoon of onoto powder
  • 30 g of a mixture of corn flour and wheat flour in equal parts
  • Salt to taste.

Preparation mode:

Well friends, this is a simple process, the important thing is to have a legume grinder (Pica-todo) on hand to grind the lentils and the electric air fryer, which is being used a lot because with this equipment you avoid the use of oils. , having this equipment the rest is to grate the legumes, fry, mix all the ingredients and then form the meatballs into balls to fry them, but let's look at this process.

  • Step-1: The first thing is to cook the lentils so that they soften a little, making sure that they remain whole, there are those who soak the lentils for 6 hours, but I think we can advance this time by cooking these lentils in the microwave , 3 minutes is enough, the important thing is that they remain whole halfway through cooking:

  • Step-2: Now I am going to start chopping the legumes, starting with the carrot and cabbage, for this I am going to use a ray of those used to grate cheese, then I am going to chop the onion, parsley with a knife and the celeri, making sure that these vegetables are as small as possible:

  • Step-3: The next thing will be to sauté the onion, cabbage and half of the parsley and celeri, so I am going to place these ingredients in a frying pan, with a tablespoon of soy oil and salt:

  • Step-4: I am going to add a tablespoon of mustard, a tablespoon of soy sauce and a little bit of onoto to the sautéed vegetables (sofrito).

  • Step-5: Well friends, after cooking the lentils, now I am going to grind them, for this I am going to use the "electric chopper", I am going to grind the grains but making sure that the mixture is not too pasty.

  • Step-6: After grinding the lentil grains, I am now going to combine this mixture with the carrot and the rest of the parsley and celeri, and I will move all these ingredients until the dough is formed:

  • Step-7: Now I will add a tablespoon of corn flour mixed with wheat flour, so that the dough compacts a little when making the meatball balls, I repeat, just a little flour, then we return to knead and ready:

  • Step-8: Well friends, the time has come to make the small balls of the meatballs, so I am going to place a little wheat flour on the step to mold the dough and give it the shape of a small ball:

Hey, that's great, with 100 g of lentils I was able to make 9 large meatballs.

Now, let's fry the meatballs in the air fryer......

-Step-9: The time has come to fry the meatballs, as I told you, I am going to use an air fryer, which does not need oil, the meatballs are well cooked and free of oil, so I am going to place them inside the fryer the meatballs:
