Hello everyone, today is an afternoon of sweets. And I have prepared some delicious papelón wrappers. Folklorically in my region they are also called cagaleras. A term that can be confusing in other regions.

This dessert is a kind of bread stuffed with papelón and cheese. It is very similar to golfeado, the difference is that once the cagalera is filled it is left to rest and then baked, that is to say; it is left whole, and the golfeado once it is filled it is cut into pieces and placed in the tray for later baking.

Since I was a little girl in my house this dessert is prepared very often. I learned to make it because, besides being really delicious, it is something that became a habit.

I indicate the ingredients and the step by step.

Ingredients:
for the dough
350 grams of flour
250 ml of milk
15 grams of yeast
½ cup sugar
4 grams of salt
2 eggs
50 grams of melted butter

Filling:
250 grams of white cheese
1 panela de papelón

Procedure:
Dissolve the yeast in the milk and set aside. Then add all the ingredients in a bowl and add the dissolved yeast. Mix all the ingredients and knead for approximately 20 minutes if you will do it by hand, if you will do it with a mixer you should do it for 8 to 10 minutes.

Let the dough rest for 15 minutes.

While the dough is resting, grate the cheese and ¾ of the papelón and mix them.

The remaining ¼ of papelón should be placed in a pot with half a cup of water and when it boils, lower the flame and wait for it to reduce. (With this mixture cover the wrappers once they come out of the oven).

Once the resting time has elapsed, divide the dough into two portions and stretch each one with a rolling pin.

Fill them with the grated paper mixture and roll them up.

Place them on a buttered tray.

Let stand for 40 minutes. Once this time has elapsed, take them to the preheated oven and bake for 30 minutes at a temperature of 180°.

When it comes out of the oven it should be covered with melted parchment paper and grated cheese.

Ricos envueltos rellenos de papelón o cagaleras como también se les conoce

Hola a todos, hoy es una tarde de dulces. Y he preparado unos ricos envueltos de papelón. Folklóricamente en mi región también son llamadas cagaleras. Término que puede prestarse a confusión en otras regiones.

Este postre es una especie de pan relleno de papelón y queso. Es muy parecido al golfeado, la diferencia es que la cagalera una vez que se rellena se deja reposar y luego se hornea, es decir; se deja entera, y el golfeado una vez que se rellena se corta en trozos y se colocan en la bandeja para su posterior horneado.

Desde que era pequeña en mi casa se prepara este postre con mucha frecuencia. Aprendí a hacerlo porque realmente aparte de ser muy rico es algo que se hizo costumbre.

Les indico los ingredientes y el paso a paso.

Ingrediente:
para la masa
350 gramos de harina
250 ml de leche
15 gramos de levadura
½ taza de azúcar
4 gramos de sal
2 huevos
50 gramos de mantequilla derretida

Relleno:
250 gramos de queso blanco
1 panela de papelón

Procedimiento:

Se disuelve la levadura en la leche y se reserva. Luego en un recipiente agregar todos los ingredientes y adicional incorporar la levadura disuelta. Mezclar todos los ingredientes y amasar durante 20 minutos aproximadamente si lo hará a mano, si lo hará con amasadora debe hacerlo de 8 a 10 minutos.

Dejar reposar la masa por 15 minutos.

Mientras se deja reposar la masa, rallar el queso y ¾ del papelón y mezclarlos.

El ¼ de papelón restante se debe colocar en una olla con media taza de agua en lo que hierva se baja la llama y se debe esperar a que reduzca. (Con ésta mezcla se cubren los envueltos un vez salgan del horno)

Una vez transcurrido el tiempo de reposo, dividir la masa en dos porciones y estirar con un rodillo cada una de ellas.

Rellenar con la mezcla de papelón rallado y enrollar.

Colocarlos en una bandeja enmantequillada.

Dejar reposar durante 40 minutos. Una vez transcurrido este tiempo se deben llevar al horno precalentado previamente, y hornear por 30 minutos a una temperatura de 180°

Cuando salga del horno debe cubrirse con papelón derretido y queso rallado.
