Yesterday, I wanted to write about my weekend, but I got distracted by the musical/family movie that I was watching "Aladdin." Let me tell you about my day yesterday, how I made a delicious Moi Moi with Custard for breakfast.

I awoke at around 6 a.m., as usual, and it was a wonderful morning. My room has a lot of natural light coming in. I jumped out of bed, knelt, and quickly did my silent prayers.

Mum had been awake since 5 a.m., and I went to the little kitchen to find her preparing the day's food. My brother, on the other hand, does not sleep at home; instead, he chooses to sleep at a friend's house, which is not far from mine, so he generally sleeps there at night and returns home around 9 a.m in the morning.

When I asked her what she was making for breakfast, she mentioned Beans Pudding, which is known locally as Moi Moi in Yoruba. I told her to take a break immediately and that I'd pick up where she left off. You might be wondering why I did that... well, one of my favorite meals is Moi Moi, and the combination of Moi Moi and Custard is one of my favorites (milk and sugar on top). We have Custard powder at home already, the only left out is the Moi Moi itself. Like I said, I stated from where she stops, the steps are below;

The Ingredients;

  • Beans

  • Red Pepper and Onions

  • Crayfish

  • Egg (Boiled)

  • Palm Oil

  • Salt and Maggi to taste

The Beans was washed in a clean warm water, then I use mortar and pestle to remove the skin and then wash till it's clean.

Now add the Red pepper and Onions to the Beans, then blend all together in an electric blender. Make sure you blend till the Beans paste is smooth

Now add the Crayfish, the Palm oil, salt and Maggi to taste and stir very well. Add more Palm oil then stir again.. scop the mixture in a small nylon bag and add the boiled egg.

Put a little amount of water inside a clean pot, and placed on the heat. Then gently put the Mixture that has been pour inside the small nylon bag. Cover the pot and allow to cook for some minutes. Keep checking it time to time to avoid burn

Remove from the heat, remove the nylon wrapper, and serve with any cuisine. As I previously stated, I enjoy pairing it with custard, so I prepared a custard with milk and sugar and enjoy. My brother came back around 10am and was exicted when he saw the meal, he ate without brushing his teeth 😅.

That looks delicious! It doesn't look like something complicated to prepare, but the final result looks great!
The next time you can surprise your mother and prepare Moi Moi instead of her... :)
