A Special New Year Treat || My Egusi Soup Recipe
Happy new year everyone, I wish all of us all the best in the coming year.

I haven't been active in the last few days due to a serious illness that prevented me from making a post or logging in to interact with others. But, with God's help, I'm back on my feet, and I'm excited to tell you all that I'm back to writing intriguing posts that my followers and Hiveans will like; I'll encourage you to follow my blog if you haven't already.
The excitement of celebrating the new year with my loved ones is overwhelming, and we cooked a special African delicacy for our visitors yesterday. I made sure to take pictures of each phase and chose to share them with you.
Egusi Soup
Egusi soup is one of the most popular dishes in Nigeria, this is one of the favorite meal of the Yoruba tribe especially those ones from the west. To celebrate the new year we decided to prepare this special treat, my mum went to the market early in the morning to get the ingredients for this dish and I was at home cleaning and making the house ready for the visitors. She came back and we started making the dish immediately
The Ingredients
Egusi (melon)
Pumpkin Leaf (Ugu leaf)
Meat (Beef)
Smoke Fish
Red Pepper and Onions (Blended)
Crayfish
Palm Oil
Salt and Seasoning to taste
Step 1: In a sauce pan, heat the palm oil on medium for a minute and then add the blended pepper and onions.
Step 2: Scoop a size mold of the egusi paste mixture into the sauce. I use a turning stick to make it shapeable. Then allow to simmer for 15 – 20 minutes so the Egusi cook through..
Step 3: Allow it to thicken by using the turning stick to stir it continuously, do this and make sure it’s thicken make sure you don’t add any water yet.
Step 4: Now add small water, allow to cook for 5 minutes, add the smoke fish, stock fish and meat and cover to cook for 15 minutes.
Step 5: Add the crayfish, make sure it’s a blended crayfish then add salt and seasoning to taste.
Step 6: Add the pumpkin leaf and cover and allow to simmer for 5 minutes, turn off the heat and serve with any swallow of your choice.

wow that looks super interesting. I love seeing all the different foods from around the world here on hive. Interesting stews and soups are probably my favorite things. or perhaps different roast meats cooking in traditional ways. All the different ingredients that can go in them. I love lunch time in my workplace as all the nurses bring in dishes from home and we have nurses from China, Tibet, India, Kenya, New Zealand, Samoa, Japan its good when everyone shares and we eat different things.
