A Quick Healthy Breakfast - Minimalist Meal Idea

My cravings for greens have rocketed recently, so whenever I pass by the aisles in the supermarket, I scrutinise the salad section and pick up a bag of fresh salad with a long expiration date.

This way, the pack of salad lasts me 3 to 5 days fresh in my refrigerator, and I quickly add a portion to whatever meal I'm having.

One of my favourite salads is Rocket.
I like the fiery, sharp taste, which adds an oomph to my bite, and it complements my strong black coffee.
Also, there's a psychologically rewarding feeling of eating greens first thing in the morning that fires up my energy and enhances the pleasure that I get from drinking my cup of coffee.

Untitled design-182.jpgI cooked my yolks firmer than usual, and my hand was a little heavy with the black pepper.

I've always had my rocket leaves mixed with some balsamic vinegar, lemon juice, and chilli flakes and poured all over.
However, from just listening to the cravings of my body, I discovered this delightful morning meal—rocket leaves, 2 firm fried eggs, on a slice of sourdough bread, with a spread of Dijon mustard.

I never would have thought rocket and eggs would taste so good, and the bonus is that this meal concoction is so satisfying that I reduced the amount of bread to one round, which makes me feel less bulky.

Untitled design-184.jpgHaving a banana on the side helps boost my morning mood, and it sets the pace right for the rest of the day.

With hints of spring in the air and these exciting meal ideas with fresh salad, I think I'll sow some seeds and get a little herb garden going at the bow of my boat.

I've noticed that my body craves the vitamins and minerals that it needs, and I struggle to absorb nutrients naturally. So, with a little boost from increasing the portion of my diet along with some supplements that I take, I can foresee an overall improvement in my skin and well-being.

Overall, I'm pleased with my little efforts to try to eat healthier because I'm a meat lover who finds bacon irresistible. Still, with sunnier days on the horizon, salads add a light freshness to meals, and salads are an inexpensive ingredient that helps boost the immune system.

This looks really yummy and eating healthy meals is one of the easiest way to stay healthy. I think once read about you having a small garden on the boat sometimes ago or probably someone else's post and I think it's awesome to be able to have a mobile garden.

Breakfast has to be light for me and since I am not an early eater, I wait till sometimes 11am. My body is used to this and I feel okay going about my farm work on just fluid.

Yes, I had a small herb garden at the bow of my previous boat. It makes sense and will be convenient, especially when I start cruising again.

That's like fasting, which they say is beneficial for the body. As long as you feel strong with lightheadedness, then I think that you are ok.
It must be great working on a farm in nature all day.

That's true, it makes a lot of sense when you can collect things from your garden instead of always returning to the shore to get some veggies.

I never tried eating that green leaves raw 😅 I wonder how it tastes..
You are truly a healthy person... Devoted to yoga and meditation, and having healthy breakfast..
Meanwhile, my breakfast usually consists of rice, boiled eggs, and banana with yoghurt hehe.. can't live without rice.. I removed wheat-containing food from my diet now, so I can't eat bread for breakfast anymore...

It's great that you're craving vegetables, that's a healthy habit. I love that you go to the supermarket and have bought vegetables
I loved this breakfast choice, an arugula and coffee salad seems like an ideal choice.
I really like fruits and vegetables, I could eat anything with them.

I used to have that daily. I might go back to doing so.
I always feel better when I eat green leafy salads like Rocket. Also, basil has many nutritional properties too, and it lasts longer than others like parsley or coriander.

This is so inviting. I feel like picking up the plate as well just to have a bite... or not 😁.

Eating healthy is a brilliant way to go, and veggies always give the right nutrients to go. Cravings can be choking if you don't get them immediately, hehe, and I have been craving chicken for some hours now. Like the deep fried chicken with salad to go will surely make my day, and I am going to make it!

I can take salad whether it is fully dressed or not 🙃.

Haha! I like that!

I know, sometimes we get that crave for chicken that we cannot explain. I recently found a place that sells whole roast chicken at a reasonable price, and I've been buying it and cooking second and third meals of choice. I prefer the bonier parts of chicken so I prefer to cook the bread in a soup or a curry. This helps me to safe my cooking gas and time.

I have never tried arugula 🫣 Already with everything you said I've been looking forward to its taste.

I like to dress salads with olive oil, although sometimes I can't afford it, I also like to add cilantro or parsley.

Yes, olive oil is expensive so I feel lucky that Extra Virgin Olive Oil is reasonably priced here in the UK because it's the only oil that I use every day.

I like coconut oil too, but I tend to use it in my hair more than I do for cooking.
I used to drink one tbsp of cold-pressed coconut oil, but haven't done so in recent years.

Excellent coconut oil for hair, I use it sometimes too.

I once prepared a small amount of homemade coconut oil, of course from a large coconut I got a tiny amount and since I kept it in the fridge it became a kind of butter and I used it on my hair for a couple of hours before washing it.

Yeah, I learned how to make coconut oil on the fire when I lived in the Philippines.
It's a great idea to use the solid oil as a butter. I think I'll go back to using coconut oil in my cooking, for different benefits:)

Mmm. Mouth-watering! I absolutely love rocket. Supermarkets here have been a bit slim pickings over winter, so I'm really looking forward to adding more greens to my diet. And it sounds like you're doing a great job of it, too!

Hello @millycf1976 first, thank you for sharing quick breakfast idea. Egg and green leaf can be right option since the green leaf will have strong taste.
I never eat rocket vegetables in my country, Indonesia. How the taste like? Is it bitter?

You can start to grow herbs in small pots. I think herbs is easy to grow as long you have good spot with sunlight.

The rocket has a sharp, spicy, fiery taste. Maybe people would find it a little bitter if they don't like vegetable much. It's super healthy, and nice on its own with a simple dressing.
I hope someday you'll get to try it, but I understand that rocket comes from Europe, so maybe it would not grow so easily in Indonesia.
Once I had a small pot of it growing in the Philippines, and then it was taken over by weed.

You can start to grow herbs in small pots. I think herbs is easy to grow as long you have good spot with sunlight.

The dressing you made with the rocket salad sounds delicious. I can just imagine the mouthwatering combination of eggs, dijon, and sourdough.

I'd love a good fresh rocket salad. I love vinaigrette with salad, any kind of vinaigrette. I just finished slices of tomato with small slices of mozzarella drizzled with extra virgin olive oil and balsamic vinegar this evening.

I think my day starters have bread and eggs as a must, or at least some form of egg sauce. Then fried plantains or yams. Really delightful. Can't forget a good cup of coffee as well.

Ohh. Egg sauce is eggs, tomatoes, onions, spices and then a little water whisked in the egg to create something that looks like this:
