Kobarid dumplings (Kobariski struklji)

The second Frikafest Festival took place over the weekend in Tolmin (Slovenia). The date of the event is not a coincidence, as it symbolises the arrival of shepherds and cattle from the high mountain pastures to the valley. During the two-day event, I had the opportunity to taste the unique cheeses from the Soča Valley, as well as cured meat products from the region. Of course, there was also Frika, a traditional shepherd's dish made with just two ingredients, potatoes and cheese. The potatoes are roasted on a pork spit, then cheese is added and baked into a deliciously crispy meal. For dessert, traditional Kobarid dumplings, filled with walnut stuffing, topped with cracklings, sage and honey. Yummy!
