Hola apreciada comunidad @foodiesbeehive , un abrazo y un gusto estar nuevamente con ustedes.

La receta de hoy se trata de unas caraotas preparadas con coco, azúcar y sal , si solos estos tres ingredientes para darle un sabor diferente a estos granos. Esta receta es muy popular en la zona costera del Estado Vargas. Viví algunos años allí y tuve la oportunidad de probar estas caraotas con leche de coco, específicamente en el famoso pueblo de Naiguatá, hechas por la mamá de una amiga de la universidad, de esas señoras expertas en estos temas culinarios. Vale destacar que he leído que algunas personas le agregan a esta receta sofrito de cebolla, ajo y ají dulce, pero recuerdo que cuando le preguntaban a la mamá de mi amiga, siempre decía: "Estas caraotas no llevan aliños porque le quitan el sabor a coco".

En nuestro país es costumbre comer caraotas varias veces al mes, se preparan y se refrigeran para ir consumiendo los días siguientes, siempre están esperando en la nevera para ser las compañeras del arroz y la pasta, para comerlas solitas como sopa o crema, para acompañar alguna proteina o para disfrutarlas refritas en un desayuno dominguero , ahh y sin olvidar mencionar que siempre están presentes en nuestro plato estrella el "Pabellón criollo". Entonces si quieres probar otra manera de preparar las caraotas te invito a hacer esta receta con pocos ingredientes.

Debo confesar que tengo una relación amor-odio con las recetas que llevan coco, me encantan los platos salados y dulces a base de esta fruta , pero cuando se trata de prepararlos, lo pienso varias veces por aquello de romper el coco , es todo un tema para mi ese proceso de darle con un martillo, despegarlo de la concha , rallarlo y todo lo que implica para obtener la leche de coco ; en una futura oportunidad voy a intentarlo con la leche de coco envasada a ver que tal quedan y ahorrarme todo este paso 😂

Bueno, después de esta confesión ahora si nos vamos con los ingredientes y el paso a paso de esta receta:

Today's recipe is about some beans prepared with coconut, sugar and salt, if only these three ingredients to give a different flavor to these grains. This recipe is very popular in the coastal area of Vargas State. I lived there for a few years and I had the opportunity to try these caraotas with coconut milk, specifically in the famous town of Naiguatá, made by the mother of a friend from college, one of those ladies who are experts in these culinary matters. So if you want to try another way to prepare caraotas I invite you to make this recipe with few ingredients.

I must confess that I have a love-hate relationship with the recipes that have coconut, I love the sweet and savory dishes based on this fruit, but when it comes to preparing them, I think several times because of breaking the coconut, it is a whole issue for me that process of giving it with a hammer, peel it from the shell, grate it and everything involved to get the coconut milk; in a future opportunity I will try it with packaged coconut milk to see how they are and save all this step. 😂

Well, after this confession now we go with the ingredients and the step by step of this recipe:

Coco seco 1 unidadDried coconut 1 piece
Azúcar al gustoSugar to taste

Bicarbonato de sodio 1 cucharaditaSodium bicarbonate of soda 1 teaspoon

Mi recomendación es adquirir caraotas seleccionadas, la mayoría vienen limpias y libres de residuos y nos ahorran mucho tiempo en el proceso de limpieza del grano. Igual las saco del empaque, las reviso, las lavo y nuevamente las devuelvo al mismo empaque u otra bolsa y las congelo hasta el día que las vaya a cocinar, este es uno de los trucos que aplico para que se ablanden muy rápido.
En una olla colocar el agua, aprox. unas 10 tazas y cuando empiece a hervir, se sacan las caraotas del congelador y se agregan directo a la olla. Es momento de agregar también la cucharadita de bicarbonato y dejo cocinar las caraotas hasta que ablanden y espesen.Yo las dejo cocinar con el bicarbonato y realmente ha sido un buen truco porque no producen los molestos gases.

Mientras se cocinan las caraotas, se procede a extraer el agua del coco, éste tiene unos huequitos, uno de ellos es el más suave, con ayuda de un sacacorchos vaciar el agua del coco en un vaso. Se reserva esa agua porque con ella vamos a licuar la pulpa. Luego que el coco esté sin agua, se le da algunos golpes alrededor para que se rompa, pueden utilizar un martillo o una piedra, este paso hacerlo con mucho cuidado no vayan a lastimarse una mano con el martillo o la herramienta que usen para romperlo, luego se procede a quitar la piel marrón con ayuda de un cuchillo o pelapapas.

Se ralla el coco y en una licuadora vamos a colocar el agua del coco, el coco rallado y se agrega un poco más de agua hasta completar una taza. Licuar bien y luego colar en colador de alambre o con un trozo de tela fina exprimir, la idea es obtener la mayor cantidad de la leche de coco.

Cuando las caraotas estén secando, es decir que tengan poco líquido, agregar la leche del coco , el azúcar y la sal ,con esta mezcla las caraotas suelen quedan dulzonas, probar antes de añadir el azúcar hasta ajustar al sabor deseado. Se dejan cocinar unos 10-20 minutos o hasta que sequen al gusto.
