What's your favourite Bone Soup/Sauce?


As Salami season comes to a close we are provided with a large variety of different foods from the one animal and being Hive the global cross chain community I thought I would ask the best community about food on their best bone broth soups and sauces.

Many cultures around the world boil down animal bones for that sweet delicious bone marrow that makes food taste all so much better and adds a lot more nutrition and flavour to the meal being cooked.

For me personally nothing goes past a good sugo which is pretty much boiling down the left over bones in a pot of tomato passata with a bit of basil, garlic, onion, salt, pepper and a dash of sugar to balance the bitterness of the tomatoes.

It can be a messy meal and if kept unlidded tends to splash sauce all over the place but is a wonderful meal that enhances your pasta sauce. It's not the same as buying some mince meat or bones I find that the best sugo is made from the bones left over from Salami.

I even do this thing when I am cutting the meat away from the bone I keep a little bit extra so when I am cooking it in the sauce it tenderises and falls off. Unless you have had it the flavour can not be explained.

I remember doing this growing up with my grandparents it was one of my favourite things, sitting around waiting for the sugo to finish cooking which my Nonna would spend all day cooking by adding more water to it over time. These days it takes me about 45 minutes to an hour all though I guess it's probably the reason why it's not the same as how my Nonna used to make it.

Once done we would plate up the pasta pour some sugo over our pasta and then have the bones on a plate in the middle of the table. You'd try and get in before my Nonno did as he'd always go for the meater one.

The meat would fall right off the bone and was so juicy and tender, delicious!

You also get these chunky bits of meat and bone marrow that fall off into the sugo while cooking it, the meat would be thin strands like pulled pork. Divinity!

Sometimes I cheat and buy a rack of pork ribs to cook with which I tend not to be as good as using leg or shoulder bones. Their smaller build would have less bone marrow which impacts the flavour.

Original these meals were for the poorer people and I remember buying pork ribs for around $3. You'd also tend to find bones put aside for 50c as butchers here in Aus would put them aside as pet food.

These meals have more recently emerged as delicacies found in higher end restaurants and eateries and the cost of pork ribs have increased to be almost around the $20 mark and bones are no longer markers as "pet food" but rather just bones and can sell for quite a bit!.

I guess butchers caught onto the fact people were creating their own broth?

Boiling down bones for meals is quite a common delicacy across the globe and common in Pho, Chicken Soups and other dishes I wanted to know what dishes were your favourite or what are some stand out ones that you enjoy?
