Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and chopped (optional, for heat)
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • Optional toppings: sour cream, diced tomatoes, shredded cheese, sliced green onions, more chopped cilantro

Instructions

  1. Sauté the Vegetables: In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for 4-5 minutes until translucent. Add the garlic and jalapeño (if using), and sauté for another minute until fragrant.

  2. Add the Spices: Sprinkle the cumin, chili powder, and smoked paprika over the onions. Stir and cook for another minute to bring out the flavors of the spices.

  3. Blend the Black Beans: In a food processor or blender, add the drained black beans, sautéed onion mixture, lime juice, and chopped cilantro. Blend until smooth, stopping to scrape down the sides as needed. If the dip is too thick, add a bit of water or olive oil to reach your desired consistency.

  4. Season and Adjust: Taste the dip and adjust the seasonings with salt, pepper, or additional lime juice as needed. Blend again to incorporate the adjustments.

  5. Chill and Serve: Transfer the dip to a serving dish, cover, and chill for at least 30 minutes to let the flavors meld. You can also serve it immediately if you prefer a warm dip.

  6. Add Optional Toppings: If desired, add toppings like sour cream, diced tomatoes, shredded cheese, sliced green onions, or additional cilantro.

  7. Serve with Dippers: Serve the black bean dip with tortilla chips, sliced veggies (like bell peppers, carrots, and celery), or as a spread for wraps and sandwiches.
