Delicious Aubergines Gratin with Chicken (ENG/ESP)

Welcome to my blog of home flavored recipes dear hivers, I wish you a beautiful day. Today I prepared some tasty eggplant canoes with chicken, very nutritious and easy to make, here I explain the process for its preparation.

Bienvenidos a mi blog de recetas con sabor a hogar queridos hivers, les deseo un hermoso día. Hoy preparé unas sabrosas canoas de berenjenas con pollo, muy nutritivas y fáciles de hacer, acá te explico el proceso para su elaboración.

We are going to need/ Vamos a necesitar:

  • Chicken breast/ Pechuga de pollo.
  • 2 Large aubergines/ 2 Berenjenas grandes.
  • Onion, paprika, long onion, carrot, garlic cloves /Cebolla, pimentón, cebolla larga, zanahoria, dientes de ajo.
  • Salt, oil, Worcestershire sauce, mustard, chicken cube, curry/Sal, aceite, salsa inglesa, mostaza, cubito de pollo, curry.
  • Grated cheese/ Queso rallado.

Process/ Procedimiento:

Place the chicken in a pot with water, add half a cube of chicken and when it is well cooked proceed to shred.

Colocar el pollo en una olla con agua, añadir medio cubito de pollo y cuando esté bien cocinado proceder a desmechar.

Cut the aubergines as shown, then remove the pulp and cut into small pieces, reserving the rind.

Cortar las berenjenas como se muestra, luego retirar la pulpa y cortar en trocitos, reservar la corteza.

Cut onion, paprika and long onion into small pieces. In a pot add a little oil and fry two cloves of crushed garlic, then fry the vegetables.

Cortar cebolla, pimentón y cebolla larga en trocitos. En una olla añadir un poquito de aceite y sofreír dos dientes de ajo triturados, luego sofreír los vegetales.

Add half a grated carrot to the pot.

Añadir media zanahoria rallada a la olla.

Add the chicken to the vegetables and mix everything.

Agregar el pollo a los vegetales y mezclar todo.

Add the eggplant to the pot and a cup of chicken broth.

Agregar la berenjena a la olla y una taza de caldo de pollo.

Season with Worcestershire sauce, curry, a teaspoon of mustard and salt to taste.

Condimentar con salsa inglesa, curry, una cucharita de mostaza y sal al gusto.

Cook until the liquids are reduced.

Cocinar hasta que se reduzcan los líquidos.

Pour the stew into the rind of the aubergines as shown, add grated cheese and take to the oven to gratin.

Echar el guiso en la corteza de las berenjenas como se muestra, agregar queso rallado y llevar al horno para que gratinen.
