Fun in the kitchen - Sugarfree Banana & Raisin Buns
I'm sure most of you will bob your heads up and down when I say the past few years have not been easy...
2020 brought lockdowns, masks and sanitizer police when entering stores.
2021 was not a better year for me personally, as Mom Lily lost her independence as she could not walk on her own, and then we had the most awful riots and looting where we could not even get any food supplies.
2022 has been even worse; Mom left us to go to her forever home. Thank heavens she was not here to experience that awful night when the subtropical Depression “Issa” caused massive destruction and deaths on the coastline of Kwazulu Natal.
Our old world certainly is out of balance!
Nevertheless, there is one place where I always feel safe and happy, and that's my favourite playground the kitchen! I hardly had any time to play in it for a long while, but I'm slowly getting back, loving it and would like to share the healthier kind with my fellow Silvers!
I'm always on the lookout for sugar-free sweet treats even though I have a terrible sweet tooth, as hubby is a Type 1 Diabetic (on Insulin).
Back in the days of @lenasveganliving's #fruitsandveggiesmonday, Silver Beet showed me what a great sweetener dates are.
This morning, quite by chance, I found the most amazing food blogger with over 727K subscribers on YouTube, Helly's Simple Recipe. I'm not surprised that Helly has so many followers, as her home bakes all look amazing and so easy to make!
When I saw these No Knead No Sugar No Milk! Super Soft & Healthy Banana & Raisin Buns, I immediately stopped everything, ran to the kitchen, put on my apron, and gathered the ingredients.
The method is the total opposite of how conventional yeast-bakes are made, using either lukewarm milk or water to bind the dry ingredients, as well as some kneading, so I was really curious to see how this was going to turn out.
I was super surprised as the dough rose beautifully and was so easy to work with.
Ready after baking for 20 min at 180°C.
I need not have feared, these buns were super easy to make and indeed were soft, spongy and really delicious!
The buns were ready just in time for tea for two old silvers. No one is really keen to go out on the roads just yet with so many low-lying roads still damaged as this causes traffic build-up.

As I said in my blog yesterday, #Hiveblopomo has helped me make time for a blog a day, the income needed right now, so although I feel sad that I have to power down once again as 2022 has brought many challenges, I am so thankful that Hive is helping again!
I'm REALLY hoping things will start normalizing again, but I'm definitely here to stay to the end!

I haven't tried new recipes for a long time and this one seems simply great with the sugar-free additive, something that I really like, @lizelle I hope that everything will be restored soon in your region.
