Flood clearance and feeding the men!

(Edited)

What a week it's been seeing the flood aftermath wherever we go and seeing the progress of the clearance of the damage at our neighbours' homes.
The young guests still need to be fed, so it was food, food, and more food!

Our young guest with the red meat allergy is back for further training, so that complicated my menu planning once again. It would not bother me as I'm not a big meat eater, but most South African men enjoy their red meat, so I had to prepare two menus on some nights.

Alpha-gal syndrome

I'd never heard of this kind of allergy before, so became curious and discovered its odd name and what causes it.

Alpha-gal syndrome is an allergy to things like beef, pork, lamb, venison, rabbit, and other animal products that come from mammals. It was first discovered in 2009. Alpha galactose, the source of the allergy, is a sugar present in most animal cells.
Alpha-gal syndrome is caused when a tick bites you, and that bite gives you the alpha galactose molecule.
Alpha-gal syndrome reaction symptoms often involve:

  • Rashes
  • Hives
  • Nausea
  • Vomiting
  • Difficulty breathing
  • Low blood pressure
  • Dizziness
  • Stomach pain
  • Extreme itching

Source

It can apparently be fatal in some instances, so I'm being super careful with not mixing cooking utensils while stirring etc. Our guest also cannot eat cheese but does use a little milk in his coffee.

On Sunday night I joined our guest in a spicy Chicken & Chickpea Curry with tomato & onion sambals and a fruity chutney.

The men enjoyed their hot & spicy Beef Curry & Rice

Fish & Chips with a savoury Vegetable Rice made everyone feel it was Friday, but no such luck ;)

Gorgeous sweet cherry tomatoes from the garden - something the pesky monkeys thankfully are not interested in!

A comforting Chicken Pie with a crispy pastry topping and sweetcorn on the cob was on the midweek menu.

20220509_183246.jpg

Pasta night was layers of pasta, savoury beef mince, tomato, red pepper, onion & basil sauce, topped with a cheese sauce.
Our young guest had his without the meat and cheese, but he still enjoyed it!

Thursday night's menu was good old comfort food - Pork Sausages with a BBQ onion sauce, creamy mashed Potatoes and Sweetcorn (yep, again!). Our guest with the allergy had chicken sausages & all the rest.

Update on the storm damage at our two neighbours

The cottage next door has been totally demolished down to the foundations which do not look in bad shape but will be underpinned. The builder will first have to build retaining walls before they can get the cottage rebuilding underway.
The plus is that they can now change the interior layout to their liking as the previous owners really had a strange layout with the kitchen leading into the bathroom!

20220514_124657.jpg

Our friends two houses away, have had all the mud cleared and the entire house cleaned by professionals, so all the mud is gone and the damage is not as bad as expected. The one section of their home will have to be rebuilt, and the foundations underpinned
They are currently in discussions with the headmaster of the school from whose bank the mudslide took place. The Dept of Education had Engineers look at the reinstatement of the bank to engineering practices to reduce the likelihood of this happening again.
All the cupboards will have to be replaced, and the flooring as well, so as her daughter said, they at least can now renovate their home, although it nearly cost their lives!

Altogether a mixed bag of a week that ended with us taking a drive down the coast, a smooth ride down, but the return trip took everyone off the freeway onto a gravel road full of potholes, but that's a story for another day!

Don't ever say being retired means sitting on the beach and getting bored; no such word in my vocabulary for sure!

Wow the devastation is heart wrenching. Being retired for you seems to mean that you have to morph into a superhero. How lucky those are to be around you. The feeding of hungry workers is a chore that many would find exhausting. You have managed to create magic for them. All the best my friend.

The devastation is quite unbelievable but it is so heartwarming to see how the community are pulling together to help those who have suffered damage. Some community members arranged repairing a bridge with a donation from someone. They must have done it with approval by the Municipality, who are overwhelmed with the devastation so will have to make exceptions and let communities like this who have members with engineering background oversee the work. Traffic has been horrendous because of so many road closures!
I don't think I've experienced retirement yet🤣
Thank you my friend ❤️

My word! @lizelle you really put out quite a Spread (I hope that means the same in SA as it does here)
All of it looks so yummy too!
Goodness, how much time you must spend in the kitchen!
So sorry for all the damage you and your neighbors have suffered. I truly hope you get back to normal soon.

Can i come stay for sometime? I'll only eat half of everything. I know I'd get chubbier because wow! That's a lot of food!!! And my favorite thing is food! And you're totally right about not letting status get to you. No matter the age, we all can still be useful.

You're more than welcome, I'll give you half, I also can't eat those large portions 😉 Thank you for stopping by @deraaa!

Kitchen leading to the bathroom is really a strange set up. God knows what was in their mind.

I have heard about this kind of allergy for the first time. The symptoms are quite similar to other allergies.

It is so nice of you that you care this much for your guest and don't even use the same utensils to avoid contamination

Thank you @amberkashif, much appreciated! Yes it really was a strange setup but thankfully they can design it better now! As for the red meat allergy, I'd also not heard of it, the young man only gets an itchy rash, but I'm still being ultra careful what I give him.
Appreciate your feedback & curation!

I hope they would design an appreciable set up for them.

It is so nice of you that you are extra careful for giving them the right meal.

Blessed day

5 years this has been happening to me, it started here, around people that are still here. Homeland security has done nothing at all, they are not here to protect us. Dont we pay them to stop shit like this? The NSA, CIA, FBI, Police and our Government has done nothing. Just like they did with the Havana Syndrome, nothing. Patriot Act my ass. The American government is completely incompetent. The NSA should be taken over by the military and contained Immediately for investigation. I bet we can get to the sources of V2K and RNM then. https://peakd.com/gangstalking/@acousticpulses/electronic-terrorism-and-gaslighting--if-you-downvote-this-post-you-are-part-of-the-problem

I had heard about meat allergies before and maybe about the tick bite causing it, but had forgotten about it. That would be terrible for me as I am very much a meat-eater and I would be amazingly sad if I couldn't have it anymore.

It is good that you are talented enough to adjust all the menus to meet the special needs of your guests. I am sure they appreciate your efforts.

That is crazy about the mudslide and all the damage it has done. Like always though, all anyone can do is brush off and start over on anything that is gone or cannot be saved. That would be pretty devastating, at least at first. I hope the correct improvements get done to keep it from happening again.

That is everyone in our road's concern, but it seems like this was a huge wake-up call for the authorities, but it was a terrifying night!

Phew, busy week I see. Great to see the progress so far with the damages from the mudslides

It's raining cats and dogs again, we're so worried as the watermain we reported to the monkeypality as being exposed and doesn't have any support, could blow if any tarmac falls on it as it's right below the section of the road that collapsed!
