Let's Cook!

In a pot, add the munggo beans and enough hot water to submerge them, and then boil them until the skin of the beans comes off.

Wash off the skin under running water, then put it back on the stove and add the remaining hot water to it and boil over low heat.

In a hot pan, add a tablespoon of cooking oil and add the meat in cook it until the meat turns into crispy.

Add the garlic, red onion, and ginger, and sauté them until the fragrance comes out.

Add the tomatoes next and cook until the texture turns into mush.

Add two tablespoons of fish sauce and let that seep into the meat and tomatoes. That way it will make the meat and tomatoes taste good.

Transfer that into the pot with munggo beans in it and mix until well combined. Set the heat to medium heat.

When it starts to boil, I add a cube of chicken broth for extra flavor and let it cook for 20 minutes with the lid on.

After 20 minutes, I added the malunggay leaves for extra veggies and to make the dish healthier hehe.

Perfect to eat while it is still hot.

Close-up look.

I pair it with the leftover chicken pastil.

Happy eating! :D
