Watercress and Peppermint Salad

This salad is special for people who suffer from sickness and poor appetite. These two plants have properties that benefits health inmediately after consuming it. It is refreshing and has to be eaten as soon as it is prepared. It will tone up the stomach and will give you a sensation of pleasure.

Watercress leaves are the best food for the blood, reduces the uric acid, they are rich in iron, vitamin C, vitamin B6, potassium and many other minerals and vitamins. They contain low calories which make them good for diets. The peppermint leaves are excellent for a good digestion. It eliminates the stress and the anxiety.

You have to use fresh leaves and it is better to cultivate your own peppermint. I will add carrots, onions and tomatoes cherry. Apart from that, I will add a dip made with lemon, a little of vineger to avoid oxidation, mustard and honey. I eat it with wholemeal bread or alone. It seems a very simple salad, but it delicious and palatable.

To prepare this salad you will need:

  • fresh watercress and peppermint leaves
  • some tomatoes cherries
  • 1 onion
  • 1 carrot

Preparation:

  • Wash the leaves an d remove the stalks

  • Cut only the peppermint leaves and use the watercress leaves without cutting them

  • Cut the tomatoes in half

  • Cut the onion in slices and grate the carrot

  • Place the leaves in a bowl, add the tomatoes and the carrots and onions

  • Prepare a dip with 2 spoons of olive oil, 1 spoon of vineger, 1 spoon of mustard, 1/2 lemon juice and 1/2 spoon of honey

  • Add the dip to the salad, salt at taste and mix

Serve as you please.
