Red Cabbage and Pineapple Slaw

This is a number 1 salad. If you want to impress your friends you can prepare this salad and serve it with anything at hand. I like to eat it with wholemeal bread and sausages. It is easy to prepare, but you have to prepare the pineapples first and cool them before adding to the salad because it is better to eat it cold..

The red cabbage is a favorite because of the high nutrients it has. It contains a pigment named anthocyanin which is a flavonoid. The flavonoids are potent antioxidants rich in vitamin C and E that help to eliminate free radicals. It is a good allied for the cardiovascular health. It protects the sight against the UV rays because of the zeaxanthin and luteinit it contains.

You need the following ingredients to prepare this salad:

  • 1 red cabbage
  • 1/2 pineapple
  • 1 small onion
  • 1 bunch of chive
  • 1 bunch of coriander leaves
  • sugar
  • 1 small cup of french dressing
  • 1/4 cup of pineapple sirop
  • salt

Preparation:

  • Cut the pineapple and cook it in water with 1/4 cup of sugar until you obtain a sirop
  • Cool it and set aside for the end

  • Prepare the french dressing with:
    3 tablespoon of olive oil, 1 spoon of sugar, 1 spoon of vinegar and 1 spoon of mustard

  • Chop the coriander leaves

  • Finely cut the red cabbage

  • Cut the onions in slices and cut the chives in small pieces and add to the cabbage

  • Add the chopped coriander leaves to the cabbage

  • Add the cooked pineapples

  • Finally add the french dressing and 3 spoons of the pineapple sirop and mix well
