Chard and Spinach Leaves Salad

To eat green leaves in your daily diet will contribute with a great amount of the nutrients you need to have a healthy life. It is said that leaves like chard, spinach, arugula, any kind of cabbages, lettuce, among others are rich in vitamins and minerals that contribute to keep cancer away. Of course, we have to eat them in a regular basis and not occasionally, so that we can obtain the benefits they give. Chard and spinach are very rich in vitamin K, folic acid and antioxidant, carotenoids and flavonoids.

The best way to eat these leaves is cooking them to avoid parasites and any bacteria that can cause gastric problems. When you cook spinachs you eliminate the oxalic acid which is very harmful for the health. Some people have problems to digest these leaves, but you can try eating a little every time until your organism get used to them.

A daily measure of these cooked leaves can provide enough calcium and protein for the bones and when cooked they taste better than raw. I am mixing chard and spinach with onions and chillie because it result in a very tasteful dish. I prepare arepas with oats to enrich the corn flour. but you can eat them with wholemeal bread. Venezuelans mix the corn flour used for the arepas with many things which make them a healthier form of eating them. We add carrots, wheat fiber, oats, zucchinis etc.

To prepare this cooked salad you need:

  • 5 chard leaves
  • 2 bunches of spinachs
  • 1 red chillie
  • 1 white onion
  • pure olive oil
  • 1 lemon or 1 spoon of vinegar
  • salt at taste

Preparation:

  • Choose fresh leaves
  • Wash them and drain the water very well
  • If necessary dry the water with a clean cloth
  • Use a plastic knife to cut the leaves to avoid oxidation

  • Remove the white stems from the chard leaves

  • Cut the leaves using the plastic knife

  • Fry the onion and chillie in the olive oil

  • Add chards and spinachs together with the lemon juice or vinegar, adjust the salt. Cook sautéing for 5 minutes only

You can serve it cold or hot, I prefer it cold as a salad and I add more olive oil. It is a good idea to make changes in our daily diet in search of a healthier life. I am having instructions from people who knows about the best diet to follow when you are getting rid of cancer and leaves are the best option. I invite you to consider this kind of feeding.

That's healthy food, I like to eat for breakfast but with different type of bread :)
