Good evening friends, I hope you had a fantastic Sunday.... My weekend was truly WONDERFUL, sharing and enjoying with my mother invaluable conversations, stories and unforgettable anecdotes. Reminding our loved ones how HAPPY we have been and expressing it with "laughter and gestures of love" is the BEST way to say thank you!

The recipe I will share with you was one of my favorite dishes during my childhood.... EVERY weekend I would watch my parents make this exquisite "rice with chicken, mixed vegetables and scrambled eggs". Whenever they prepared this dish, they would add some additional ingredient to perfect the recipe and turn it into their BEST version... Join me, let's put on the apron and enjoy this fun process together!

Mi fin de semana fue realmente MARAVILLOSO, compartiendo y disfrutando con mi madre invaluables conversaciones, de historias y anécdotas inolvidables. Recordar a nuestros seres queridos lo FELICES que hemos sido y expresarlo entre "risas y gestos de amor", es la MEJOR forma de agradecer!

La receta que compartiré con ustedes era uno de mis platos predilectos durante mi infancia... TODOS los fines de semana observaba a mis padres realizar éste exquisito "arroz con pollo, vegetales mixtos y huevos revueltos". Siempre que preparaban éste platillo, agregaban algún ingrediente adicional, para así perfeccionar la receta y convertirla en su MEJOR versión... Acompáñenme, pongámonos el delantal y disfrutemos juntos de éste divertido proceso!

  • To make this recipe, we will use the following ingredients: 500 gr chicken breast, 2 onions, 2 red peppers, 3 eggs, soy sauce, celery (leaves and stems), ginger and 1 cup rice.
  • Para realizar ésta receta, utilizaremos los siguientes ingredientes: 500 gr de pechuga de pollo, 2 cebollas, 2 pimientos rojos, 3 huevos, salsa de soja, célery (hojas y tallos), jengibre y 1 taza de arroz.

  • We will start preparing our succulent rice: Add 1 cup of rice together with 2 cups of water, add 1 tablespoon of oil and 1 teaspoon of salt. We will add to the water the stems of "celery" cut in "small" cubes, we integrate half of the "ginger", I suggest to grate it on the fine side.
  • Empezaremos preparando nuestro suculento arroz: Añadimos 1 taza de arroz junto con 2 tazas de agua, colocamos 1 cucharada de aceite y 1 cucharadita de sal. Agregaremos al agua los tallos de "célery" cortados en cubos "pequeños", integramos la mitad del "jengibre", les sugiero rallar por el lado fino.

  • After 25 minutes our rice is ready! We incorporate it into a bowl, to prevent it from acquiring a VERY soft consistency.
  • Transcurridos 25 minutos nuestro arroz esté listo! Incorporamos a un bowl, para así evitar que adquiera una consistencia MUY suave.

  • To sauté ALL the ingredients I used "sesame oil"... Cook the chicken breast (cut into medium cubes), until golden brown on both sides.
  • Para sofreír TODOS los ingredientes utilicé "aceite de sésamo"... Cocinamos la pechuga de pollo (cortada en cubos medianos), hasta que se dore por ambos lados.

  • This is how appetizing and succulent it was! We reserved it to use in the final step.
  • Así de apetitoso y suculento nos quedó! Reservamos para utilizar en el paso final.

  • We add one more touch of oil... To give prominence to our "onions", we cut them in "thick" julienne strips (season with salt and pepper).
  • Volvemos a colocar un toque MÁS de aceite... Para darle protagonismo a nuestras "cebollas", las cortamos en julianas "gruesas" (salpimentamos).

  • Incorporate the "bell pepper" along with half of the reserved "ginger". Place our juicy chicken cubes.
  • Incorporamos el "pimiento" junto con la mitad del "jengibre" que teníamos reservado. Colocamos nuestros jugosos cubos de pollo.

  • In this step: add the rice, the scrambled eggs, the "soy sauce" and the "celery" leaves.
  • En éste paso: añadimos el arroz, junto con los huevos revueltos, la "salsa de soja" y las hojas de "célery".

  • Friends, our "nutritious and healthy" dish is ready to enjoy!

Yeah, Every Sundays I have a holiday fromprofessional working. So I think Sunday is a best day for stay connetced with loving once for share our experience, happiness etc..
I love this dish what you had prepare Sunday since home. Rice, chicken, egg and vegetables combinations brings more flavor. Very well food introduction.

I am very happy that you also like one of my favorite dishes. Sometimes I change some ingredients, trying to find as my parents did a "perfect version", but the magic and the secret of ALL recipes is in the "energy and love" that we add to the preparation.
