Good evening dear friends, I hope you had a happy weekend.... Today, I prepared for breakfast some delicious "green and ripe plantain empanadas".

You will enjoy the sweet contrast provided by the ripe plantain, you can fill them with the ingredients of your choice: cheese, ham, meat, chicken, vegetables... This time, I took advantage of the fact that I had a delicious "ground beef with carrots" reserved, I can assure you that the contrast was really exquisite!

Buenas noches queridos amigos, espero que hayan pasado un feliz fin de semana... Hoy, preparé para desayunar unas exquisitas "empanadas de plátano verde y maduro".

Disfrutarán del contraste dulce que aporta el plátano maduro, pueden rellenar con los ingredientes de su preferencia: queso, jamón, carne, pollo, vegetales... En ésta ocasión, aproveché que tenía reservada una deliciosa "carne molida con zanahoria", les puedo asegurar que el contraste fue realmente exquisito!

  • To make this recipe I used 1 "green" and 2 "ripe" bananas. Wash, cut into "medium" pieces for faster cooking.
  • Para realizar ésta receta utilicé 1 plátano "verde" y 2 "maduros". Lavamos, cortamos en trozos "medianos" para que la cocción sea más rápida.

  • Cook over medium-high heat, add 1 teaspoon of salt. Ripe plantains will soften sooner. You can cook them separately or be careful to remove them when they are ready.
  • Cocinamos a fuego "medio-alto", añadimos 1 cucharadita de sal. Los plátanos "maduros" se ablandarán antes. Pueden cocinar por separado o estar atentos de extraer cuando estén listos.

  • After 25 minutes of cooking, the "ripe" plantains are ready.
  • Transcurridos 25 minutos de cocción los plátanos "maduros" están listos.

  • We extract the seeds that are in the center of the bananas. With the help of a fork, mash until you get a puree.
  • Extraemos las semillas que están en el centro de los plátanos. Con ayuda de un tenedor trituramos hasta conseguir un puré.

  • Knead well until a smooth texture is formed. Add 1/2 cup of corn flour along with a small touch of water. It is important to achieve a slightly firm, but manageable consistency, to prevent it from breaking during the cooking process.
  • Amasamos bien hasta formar una textura suave. Agregamos 1/2 taza de harina de maíz junto con pequeños toque de agua. Es importante conseguir una consistencia un poco firme, pero manejable, para evitar que se rompa durante el proceso de cocción.

  • Let's start our wonderful process... We fill our exquisite empanadas. I suggest leaving some space on the edges to prevent them from breaking when frying.
  • Empecemos nuestro maravilloso proceso... Rellenamos nuestras exquisitas empanadas. Les sugiero dejar espacio en los bordes para evitar que se rompan al sofreír.

  • Cook over medium-high heat, until golden brown on both sides... This is how appetizing our first empanadas are getting, VERY crunchy and tasty!
  • Cocinamos a fuego "medio-alto", hasta que se doren por ambos lados... Así de apetitosas van quedando nuestras primera empanadas, MUY crujientes y sabrosas!

  • This time, I enjoyed my succulent empanadas with a touch of "pink sauce and coriander"... Enjoy!
  • En ésta ocasión, disfruté mis suculentas empanadas con un toque de "salsa rosada y cilantro"... Buen provecho!

What I like most about this recipe is how versatile it is. Whenever I prepare it I keep it in airtight glass containers and it stays fresh for 3 days.
