Good evening Hivers, I hope you had a great Saturday.... One of the dishes I enjoy the most are soups in all their presentations and styles. I had been wanting to prepare a healthy and nutritious "soup with mixed vegetables and rib meat" for some time. Let's put on the apron and start our fun and wonderful process!

Buenas noches Hivers, espero que hayan pasado un sábado genial... Uno de los platillos que más disfruto son las sopas en todas sus presentaciones y estilos. Tenía tiempo deseando preparar una saludable y nutritiva "sopa con verduras mixtas y carne de costilla". Pongámonos el delantal y empecemos nuestro divertido y maravilloso proceso!

  • To make this recipe I used two types of beef with ribs, the bone and fat that this meat has, will provide a VERY tasty and hearty flavor to the soups. After washing well, we proceed to cook. Add enough water to a deep pot, cook for approximately 45-50 minutes or until tender. In this step we will NOT add salt to the water.
  • Para realizar ésta receta utilicé dos tipos de carne de res con costillas, el hueso y la grasa que posee ésta carne, aportará un sabor MUY sabroso y sustancioso a las sopas. Luego de lavar bien, procedemos a cocinar. Agregamos suficiente agua a una olla honda, cocinamos aproximadamente durante 45-50 minutos o hasta que comprobemos que se ablandó. En éste paso NO agregaremos sal al agua.

  • To give an exquisite flavor to our dish, we integrate 2 peppers (green and red) together with 1 "big" onion. We will cut in "small" cubes. We will also use: chives, coriander, mint and chicken cubes.
  • Para darle un exquisito sabor a nuestro platillo, integramos 2 pimientos (verde y rojo) junto con 1 cebolla "grande". Cortaremos en cubos "pequeños". También utilizaremos: cebollín, cilantro, yerbabuena y cubitos de pollo.

  • We integrate the cubes, along with our aromatic coriander leaves, mint and chives.
  • Integramos los cubitos, junto con nuestras aromáticas hojas de cilantro, yerbabuena y el cebollín.

  • The vegetables I used were: pumpkin, carrot, arracacha, potatoes and zucchini. We will cut them into cubes.
  • Las verduras que utilicé fueron: calabaza, zanahoria, arracacha, patatas y calabacín. Las cortaremos en cubos.

  • Add our vegetables, cover and cook over medium heat until they are tender.
  • Incorporamos nuestras verduras, tapamos y cocinamos a fuego "medio" hasta comprobar que se ablandaron.

  • I love to add a touch more coriander. Our exquisite dish is ready to enjoy!
