We bought a mountain shoulder, in the process of curing (to date already completed) and when the children and their partners arrived, to give us a surprise, we surprised them by inaugurating the shoulder!

I'll explain something that I learned in the process of buying the palette. This piece of the pig is the front leg, while the pernil (ham) is the hind leg. That is why, technically, the shoulder is not ham (it is not pork), but the meat and the curing process are basically the same. And as a family we enjoy this "serrano ham".
