What will interest you about Cassava plant.
Cassava is one of the most commonly consumed plant in Nigeria, it serve as food and also in production of starch. Some years ago when I realized how my farm dress always get starched due to the water from cassava tuber when grinding it, I had to try it with a normal dress. The first time I did, it wasn't that good because of some white spots on it, but when I tried it again it was so perfect and nobody observed my dress was starched using cassava tuber.
Farming is amazing and has given me leverage in my knowledge of Agriculture, Some may see it as stressful or time consuming but i find it interesting and you can make nice earnings from it if managed properly, over here it is not only the earnings but the cost of living is reduced due the foodstuffs that can be gotten from it.

Recently I took part in processing of Cassava into garri and fufu(locally made food) which I feel it is important to share.
Processing Cassava into garri
The steps involved are:
1. Harvesting.
The first thing to do is harvesting of the cassava tubers, the harvesting process can only be done in mature plants, for it to mature it will take about one (1) year plus.

2. Peeling.
This process involved the taking away of the outer surface of the Cassava tuber. The peels can be used in feeding goats and also serve as manure.


It is put in bags for easy transportation.
3. Washing and Grinding.
After peeling, the cassava tuber will be dirty and without washing the cassava, when consuming it won't be healthy enough. The next thing that follows is grinding, in this phase red oil can be added for red garri or you may choose the white garri which doesn't need red oil(palm oil).


4. Pressing.
This process will drain water from the Cassava to aid sieving. This one requires high manpower.

5. Sieving and drying.
This phase selects the particles that were not fully grinded from the good ones. Drying is the last stage were you also heat the sieved garri so that it can get dried.

To make Fufu(locally made food) from cassava after you are done with peeling and washing,the next thing is to soak the tubers in water where it can be opened and closed for few days till it gets soft. When it's soft then washing and filtering can take place before pressing water out of it and cooking.

The drying process requires heat but not too much, if too much the garri will burn.

Dried balls of cassava are exported with the name tapioca. The term "tapioca" comes from the Tupi language. Tapioca is often used in puddings.
