Sauteed Carrots With Sweet Corn And Tempeh


Cooking every day needs to be prepared with a different menu every day, because I am a housewife, I need to cook for the family every day, and before I start cooking, I need to plan what menu is suitable and different from the previous day, so that my family doesn't get bored with the menu is the same every day, and that day I have determined a menu that is suitable and according to my and my family's tastes, so I cook stir-fried vegetables such as carrots, corn and bean sprouts and tempeh, and I add a little shrimp.

Carrots are plants that are rich in nutrients and have many benefits for the body. Carrots are also a plant that is often found in markets and is quite easy to get. Carrots contain vitamin A which can nourish the eyes and can prevent damage to the eyes such as cataracts, nearsightedness, and others related to eye diseases.

This time I want to try making carrots by mixing sweet corn, bean sprouts and tempeh. This sweet corn is usually cooked with boiled spinach leaves to give off a gravy that has a sweet fat taste. But this time I cooked this sweet corn in a different way.

The ingredients needed for stir-frying vegetables that are full of nutrients are:

  • 1 carrot.
  • 1 corn.
  • 1 medium size tempeh
  • peeled shrimp 300 gr.
  • Bean sprouts that have been cleaned 300 gr.


Pureed ingredients:

  • 4 red onions.
  • 1 clove of garlic.
  • 1 tomato.
  • 5 red chilies.
  • 10 bird's eye chilies
  • 1 lemongrass.
  • 3 kaffir lime leaves.
  • 1 sheet of pandan leaves.

The first step

Cut the carrots, tempeh and sweet corn into small pieces. So that all of these ingredients can be cooked simultaneously, without reducing the taste of sweet corn and carrots.


Second step

Put the spices in the blender and grind them.


Third step

Prepare a stalk of lemon grass, kaffir lime leaves, pandan leaves that have been cleaned and red onions that have been sliced.


Fourth step

After that, add the oil to the pan, wait until it's hot, sauté the shallots, lemongrass, pandan leaves, and kaffir lime leaves together.


Step five

Saute until fragrant, put the spices that have been mashed earlier into the pan, wait until it's hot.


Sixth step

then enter the vegetables that have been cleaned together. Wait until the process is complete, stir until well blended. Wait until about 15 minutes.


Seventh step

Finally add 1/2 teaspoon of salt, stir again until completely cooked.


The dish is ready to be served, the vegetables are full of nutrition and can nourish the body with a sweet and spicy taste plus the aroma of kaffir lime which really excites my taste. If you eat it in the morning, it will taste better if you add warm white rice, that's great.
